Just for the record, this brew was aged for 15 months in Elijah Craig 18 year barrels, one month of which it was aged with chocolate and ancho chiles. I had a few glasses of this brew while in Clybourn brewpub over New Years. Served in a 10oz glass:
A - pours mahogany brown but a touch on the lighter side with slight amber hues coming through the sides. Light cloud patch of foam in the middle but only light foam ring on the outside. No real lacing.
S - Lighter hints of chocolate, leather and brown sugar, caramel and toffee but on the lighter side at first. As this brew warms the chocolate really becomes noticable. However, really no smell of them chiles. Touch of vanilla, oak and bourbon.
T - Pretty heavy on the brown sugar and a touch sweet. Bits of lactose and caramel. As it warms, the chocolate really comes through with a mixture of bourbon, vanilla and oak. Still not getting the chiles.
M - Pretty decent amount of carbonation with velvet and cream. Very smooth and really no hints of burn from the ABV. A really nice sipper.
O - Although the price for a glass was $10, it didn't stop me from having 4 of them. I really enjoyed this one quite a bit. At first I wasn't extremely impressed since I was really looking for the chocolate and chiles, but once it warmed, that chocolate really came through. Really nice treat to have, and one that I'm glad I drank a bunch of. Cheers!

On-tap at Goose Island Clyborn.
Pours a slightly cloudy mahogany red with very little off-white head that doesn't last long.
Aroma is semi-sweet chocolate, bourbon, and wood. Reminds me of Bourbon County Stout a bit.
Taste upfront is slightly sweet, bourbon, wood, vanilla, caramel and toffee malt. Bourbon lessens at the finish. Roasty toffee malt mixes with semi-sweet chocolate and a chili heat. Lingering sweetness, bourbon, wood, and vanilla.
Medium to full bodied and syrupy with low carbonation. Little alcohol heat.
Delicious! Great bourbon presence. Chocolate and chili flavors compliment the bourbon and toffee malt nicely. Flavor is really complex and interesting. One of the more unique beers I've had in a long time.

On tap at the Goose Island Clybourn Brewpub 12/31/2011
Appearance is nothing impressive, deep amber brown color, no head, very thick and viscous looking, thin layer of film atop the beer. The smell is heavy chocolate, faint pepper but could be a lot more pronounced, grains are present, but toffee and caramel are big players in the aroma as well. It smells like desert, perfect night cap/final beer. The flavors are fantastic, deep rich bitter dark chocolate balanced slightly with faint spicy pepper flavors, but again wishing they were more explosive. Big toffee and caramel flavors are at the forefront like in the nose with more grains than the nose, but not detracting from the crazy flavors going on. The body is incredible, full, creamy, smooth, chewy, perfect. It fits the beer so well and compliments every element.
Verdict: This barleywine is incredible. Hats off to the brewers and Rick Bayless for making such a fine beer. King Henry has a new threat to the throne.
