A- Cloudy, pale body with a thin white head. Almost looks like pineapple juice.
S- Yeasty aroma with a ton of citrus and tropical aromas. Citrus hops come through along with a slight aroma of toast.
T- Yeast comes through with bread notes, but also some toast that may be from the oak. Strong citrus flavors with a white grape flavor coming through as well.
M- Juicy initially, with an extremely dry middle and finish. Slight carbonation bite at the end. Almost has the feel of a flat sparkling wine.
O- Very good saison that has some slight sour-like qualities. Very good fruit flavors come through with good drinkability.

A: Pale lemonade coloring is dense in clarity and lively in carbonation. Glass consuming soapy white head is rocky is sudsy and leaves smudges of sudsy like lace patches on the vessel.
S: Musky grain, tart, light barnyard funk.
T: Crisp tart lemony musky flavor, grainy with a barnyard funk. The funky yeastiness rules this beer with authority. A touch of grain sweetness blends in.
M: Tight bubbly mouthful, big pilsner grainy feel, with a musky sourness.
O: Not many american brewers dare to tread into the funky belgian territory let alone pull it off with such authentic nature. This one is dead on, funky, clean and crisp, close your eyes and your in Belgium.

A - A cloudy blond, with 1 finger of head and a minor amount of lace left on the glass.
S - Slight smells of belgian candy yeast. Not much else. Not a strong aroma.
T - Citrus, orange, coriander, and you can taste the white wine barrel aged notes in the aftertaste. Pretty tasty.
M - Light bodied, medium carbonation. Easy to drink.
O - A very drinkable Saison, but I prefer my Saison's more funkier. Very light, easy to drink.

A: pours a light gold with moderate transparency creating about 1/2 fingers worth of white head formation (reminds me of a Summer Shandy in apperance). thousands of bubbles rush to the top keeping a thin film of head formation.
S: big lemon and orange citrus, melon, slight funky yeast, bananas, a small hint of cloves, and just a slight touch of spice/pepper. overall a pretty nice balance of aromas
T: again the orange peel and lemon zest are the main players in this brew. similar to the nose, there is a slight funk present, some slight peppery spice. I'm honestly not picking up on the barrel aging qualities, which is slightly disappointing. The finish is nice and crisp with a touch of cream.
M: very, very light on the tongue and the palate. doesn't leave much other than an ever so slight orange peel and pepper note. Moderate-heavy carbonation
O: decent brew, and it has very high drinkability. this one would be excellent in the summer at a BBQ. I think that it is a touch too light for my liking and would love a bit more funkiness to it.

2012 bottle poured fresh into a Tulip glass.
A - HUGE white pillowy head! So fluffy that I can easily tower it above the glass rimline. Yellow-Golden hazy body with great carbonation bubbles on this one. Beauty to behold. Great lacing!
S - Wow... great zing of lemongrass making me pucker after wafting its' sour citrous notes. Also smell some delicious Belgian yeasts in there. Absolutely wonderful smell.
T - Again, I am pleasantly impressed by this beer. Well worth the investment. Again, mostly a mild Begian funk from the yeast and the sourness from an orange-lemon zest. It's not malty by any stretch of the imagination, but just incredibly refreshing
M - Soft on the palate... Very welcoming and enticing to drink. Great carbonation. Crisp and sweet, but certainly not syruppy at all.
O - Will buy again in the future and would certainly recommend.

Poured the 2012 Sofie - bottled on 22nd August into a snifter. I did not like it at the tasting. However, i still bought it mainly on the recommendation of the store guy. I do not regret the decision.
A good one and one-half finger thick white creamy head that soon disappears in to a very thin layer. Pale straw color with good amount of haze, probably due to suspended yeast. Otherwise, translucent. Decent to no lacing. Slightly bubbly.
Aroma : Fruity with slight orange peel like smell. Some hints of pepper like phenol as well. very complex and deep aroma but not very strong. Some spices as well.
Taste : Fruity citrus taste with a good blend of spices. Small presence of hops which is well balanced to avoid any sweetness. Lemon, pepper and some spices. Good effervescence and somewhat refreshing taste. Very good spicy-citrus after-taste that mildly lingers.
Mouth feel : Low to slightly medium feel. Very easy drinking despite high carbonation. Dry on palate. Some tartness is felt on the tongue. Alcohol hotness is not felt as it is moderately alcoholic at 6.5%
Style rate : 4.25

A: A light yellow in color, very transparent, a slight head at the top, and left a little lacing around the tulip glass.
S: First smell that is upfront is the sour apple, and some pears, slight hints of cloves and pepper as well.
T: A nice taste of caramel and orange zest, and the nose follows the taste as well, almost to the tee.
M: Light bodied, moderate carbonation
O: A great brew, very refreshing and light, great tasting and well balanced all around.

Served a 2009 vintage from the Goose Island pub on Clybourn. Enjoyed on 2/15/13.
A - light golden/brown. Very hazy. NOT the straw colored clear version a fresh Sofie has. Poured slow and carefully so only a finger of very white head.
S - light fruity belgian yeast. lemon, orange, almost a wheat flavor.
T - Wow. yes, still very carbonated. You could argue this is a champagne. very crisp. lemon, pair, white grape and orange. very complex now. Excellent flavor
M - Carbonation has a Fiesta in your mouth. Bubbles pop on your tongue.
O - Excellent saison. only knock might be the high carbonation. your tummy does start to move after about half the beer is down.

Poured from a 22 ounce bomber into a Spiegelau tulip. Bottled on 11/12/11 printed on label. I'm drinking it exactly one year after it was bottled.
Appearance: Pours a nearly clear golden yellow with a 1 finger foamy snow white head which dissipates fairly quickly. Minimal lacing.
Smell: Nice fruity aroma blending citrus, pear and a bit of sweet white wine. There is just a hint of spiciness creeping through.
Taste: Dry white wine notes with a touch of apple and pear up front followed by Belgian yeast, mild phenols and a touch of funk in the middle before ending with a bit of black pepper. Aftertaste is dry and mild with Belgian yeast dominating. This is clearly a Belgian-style saison.
Mouthfeel: Light-to-medium-bodied with a high amount of carbonation.
Drinkability: Excellent drinkability. You won't have any trouble polishing off the bomber alone.
Overall: Very good beer overall. I would recommend giving this one a try. I'd like to try it fresh to compare. Now that Goose Island is distributing to Florida, I hope Sofie makes the trip down here along with their regular offerings.

A: Pale, cloudy yellow with a big fluffy white head.
S: Belgian yeasty aromas dominate, with some wine characteristics, citrus, a peppery bite, and an occasional hint of something unpleasantly musty, almost spoiled, that ruins the otherwise good smell.
T/M: Pleasantly winey and smooth, with grape, citrus, a touch of spiciness, and that underlying Belgian yeast character. Some strong, sugary bubblegum flavors as well. Well carbonated and a little tingly on the tongue, like sparkling white wine.
O: Not a bad saison, but the taste isn't as rich and complex as other Belgian ales, and the aroma has that unpleasant off character that detracts from the overall beer. Not one I'd get again despite its good points.

S - Nice light citrusy smell, slight sour/tart aroma.
T - Well balanced, floral, just the right amount of carbonation. Alchohol very much in background.
M - Creamy, pleasant aftertaste.
O- This is an excellent ale. Maybe not quite as good as Duvel (which has a similar taste), but very well done. I can see Sofie in my future.

Bottled 2/11/11
Appearance. Pours a hazy, deep straw-gold with 3+ fingers of foamy white head.
Smell. Funky belgian yeast, some orangy citrus fruits, and a little light malt and belgian spices.
Taste. Lightly sour oranges, some light belgian yeast and just barely a hint of funk and wood.
Mouthfeel. Light body and full carbonation.
Overall. A very nice, delicate, light, and refreshing beer. I loved the unsweetened orange taste. Doesn't taste like it's from the USA, and that's a good thing for the style. This one went fast!

A: Hazy lemon yellow, crazy carbonation, spun cotton candy head. ok lacing.
S: yeast, lemons, band aids.
Slightly sour taste with lemon tartness. Some pale malt. Dry finish.

Poured from a 12 ounce bottle into a Samuel Adams pint glass. Purchased at Wakefield Liquors in Wakefield, RI.
A- Hazy, dull yellow with a small fizzy head that instantly recudes to leave no foam, just little white spots. Not very inviting to be honest.
S- Belgian funk, sour apples, citrus, yeast. Still not very turned on, but let's see how it tastes.
T- Redeemed! Upfront, this beer barely follows the nose. Wheat, spices (nutmeg+clove), musty upfront. finishes with champagne, granny smith apple notes. Very interesting; very complex.
M- Very carbonated, soda-like. Thin and crisp, but fitting for the style and flavor.
Overall, a unique brew. Complex in character and fun to taste and evaluate. Crisp, refreshing, and delicious. Try it, I feel like everyone will have a different interpretation of this brew!

S- Pineapple, sour apple and damp wood flavors all come through. A little malty and a little fruity, nice blend.
T- Tangy pineapple blends with light bready malt before giving way to some of the grainy malt and wood from the nose.
M- Light body and carbonation, this feels like a typical saison (though a bit lighter in carbonation) and suits the flavors well.
O- This is a great beer up there with some of the better Brett beers I have had and among the best saisons as well.

Straight pour from 12oz pry-off bottle to a 25cl Duvel Single tulip; bottling date of July 25, 2012 printed in black ink at the bottom of the back label (“BOTTLED ON: 07/23/15 1509”).
Appearance (3.5): Pours a lively three fingers of bone-white head sitting atop a lightly hazy, pale straw yellow-colored body. The head is made of tight foam that dissipates to just a thin film on top, leaving loose, think legs of lace around the glass. Almost no retention, in the end.
Smell (4.5): Very light, musty-earthy-damp straw character, white grapes and some fresh pears, lemon juice and light biscuit character. That light, damp, earthy character is so, so pretty and refreshing.
Taste (4.5): Goddamn. Now that is light and fresh and pretty—like a summer dress. Mildly (white) peppery up front. Good floral bitterness and some light, fruity citrus flavor (lemon without all the acidity and just a little bit of orange juice) up front. The malt is so light and soft, biscuity and just barely sweet, and lightly tart (hi there, wheat). The finish brings out more of the orange peel, adding a citric bitterness that blends extremely well with a mildly vinous acidity.
Mouthfeel (4.0): Soft carbonation, tingles lightly as it finishes, just on the light side of medium-bodied. Not as aggressively and finely carbonated as I prefer for saisons, but the feel fits the palate nicely.
Overall (4.5): Lovely. So light and pretty and floral and lovely. This is an excellent saison, not perfect or 100% true to style in terms of feel and appearance and some flavor characteristics, but just so nice and refreshing. If you offered me five random saisons to pick from, chances are this would be my choice four out of five times, at least. Definitely worth the pricetag, too. Wonderful beer, absolutely will seek out in the future.

11 ounce pour - $8.00 at Taco Mac in Kennesaw, Georgia.
Appearance: Served up a hazy, pale straw-hued body with a slim coating of white fizz.
Smell: A scent of casually chewed gum atop notes of reserved malts, coriander seed, meager pear, a little snippet of citrus, and 'nanana.
Taste: Starts with a very soft, very gentle maltiness, then the tranquility is tainted by a large dollop of icing sugar for a jarring initial sweetness. Orchard fruits, pureed bananas, and a nod towards the citrus component. All the while a taste of Chiclets. A little bitterness. Coriander spiciness, but also some pepper. Fruity Chiclet, sugary, lightly spiced finish.
Mouthfeel: Medium-light body. Medium-plus carbonation.
Overall: It was merely okay. Just barely so-so. I had rather expected this one to please with ease. Time to fire up the Smokey Robinson song, "Tears of a Clown."

Fresh 12 oz bottle poured into my new tulip glass. It’s actually a pretty good story how I got this beer: I was mix-and-matching some pumpkin beers (including DFH Punkin – review to follow) and I found this one hidden behind some Blue Moon Harvest. Well, the store didn’t allow customers to break up four or six packs, and since I certainly wasn’t going to pay $11 for a four pack of Sofie, it was pretty perfect to find a decent single amongst the swill.
At least, I thought it was going to be good, given its high-ish BA rating.
A – pilsner. That’s all I think of. Not terribly impressive, and especially not when one considers how rich Belgian style ales can look. The foam is impressive, however.
S – lots of fruit, this is definitely the highlight of the beer. I smell berries, but beneath them I smell generic light beer.
T – completely unimpressive. I don’t feel good about saying this, considering how much everyone seems to love this beer. I’m not a huge fan of Belgians or Saisons in the first place, but I can usually appreciate them. This I do not care for. Much like the smell, I taste hints of fruit at first, but beneath it, the beer isn’t even rich.
M – also not great. Sour, in fact.
O – I will not be getting this again, of course, even if it is available as a single. I literally cannot believe they charge so much for a four pack of this stuff. Luckily, I bought a four pack of Leviathan DIPA with my mix-and-match, so the night wasn’t a total loss.

Ah, Sofie! Ma fleur de printemps délicat! I've heard only great things of this beer. I, however, overlooked it during my Saison bender because I could only get it in a 4-pack for more money than I had wished to spend at the time. I muse that was a mistake, because this beer is phenominal.
Serving: Bottle poured into a Tulip.
A- A warm Champagne. Slightly hazy, though that may be due to my poor transportation efforts. Pours a two-finger pure white head comprised of big bubbles that dissipate quickly into a single finger. Bubbles even shooting up the middle of the glass- looks heavily carbonated. Barely any lacing.
S- Wow, I can smell it from 2 feet away. TONS of light citrus and flowers. Almost a little soapy. A shy hint of coriander and spice. Smells like a perfect spring day.
T- Very tart up front, exactly like the smell suggests. Slightly sour, but not overly so. Like a combination of a green apple, a lemon, and a banana. Subtle hint of spice in the finish. Gonna wait for it to warm up a bit and see how it develops.
Getting a little buttery and grassy now. Still incredible. Some very light malt notes coming up.
M- Carbonation dominates. Drinks like a very dry Champagne. Gorgeous. Medium-light body due to the sediment. Exactly what I expected. The dryness prevails as it warms up.
O- Absolutely amazing beer. I'd love to sit down and have a few more, but at $18 for a 4-pack at my local beer store I had to spring for just a single bottle. Definitely the kind of beer I was looking for, and one of the drier Saisons I've had. I would have liked to see a higher ABV to try and get a little bit of booziness and malt sweetness to really make the buttery note shine, but at 6.5% Sofie does a fine job. Might give aging one of these a try.

2012 bottle direct from the brewery. Pours yellow , smells like pepper, taste is not my cup of tea. Gross, too bubbly, nasty aftertaste. Drain pour. Bottle. Head is initially small, fizzy/frothy, white, mostly diminishing. Body is medium yellow, bottle conditioned. Aroma is lightly malty (toasted grain), lightly hoppy (herbs, flowers), lightly yeasty (basement, cement), with notes of gum/banana, lemon candy, and pepper. Flavor is moderately to heavily sweet, lightly acidic, lightly bitter. Finish is lightly to moderately sweet, lightly acidic, moderately bitter. Medium body, watery/syrupy texture, lively carbonation, lightly alcoholic. Overly sweet. The nose portends this, being very gummy/banana-ish and sugary. Not very enjoyable, not good.

12oz - 2012 bottle.
Appearance: Pours a yellow-orange color with a little over one finger of white colored head. Holding this beer to the light reveals a lively effervescence and hazy yellow liquid. Decent lacing being left behind and I sip on this one.
Aroma: Orange zest, Lemon Peel, White Wine, Grapes, and faint vinegar.
Taste: There's a nice tart orange flavor up front. I'm getting a grassy/lemon flavor not too long after that. Very bright and refreshing citrus flavors in the middle. The tartness shows up again near the swallow, but this one actually has a pretty clean and slightly dry finish leaving you wanting another sip.
Mouthfeel: Light to medium body with moderate carbonation.
Morey's Bottom Line: A great beer. One of my favorite Saisons without a doubt. The bottle states that you can age this beer up to 5 years, but I might never know how it ages because I can't stop drinking mine!

Pour/Appearance: A thick, 2 finger head, with lots of lacing. a hazy golden/amber in color. Some yeast sediment noticeable.
Smell: A strong citrus smell with a hint of spice were the only notes to standout.
Mouthfeel: Medium-bodied without an abundance of carbonation. A smooth beer with good balance.
Taste: Citrus from the orange peel very evident, though it seemed more lemon than orange. Possibly a bit of coriander lending to the spice notes.
Overall: This is an excellent beer, thought saison/farmhouse style is not noted on the bottle, it is very much evident. While no one area (appearance, smell) stood out as uniquely outstanding, the overall experience was excellent and this is a beer I'd have again and recommend.

From a bottle to a tulip. Bottle had a 6/11/12 date.
A-Light yellow. The color of dry hay (poetic, I know, but that is what I thought of). There was a slight haze that quickly went away. Medium plume of white head dissipated pretty quickly. Tiny bubbles of carbonation were visible.
S-Grapefruit and lemon. Lots of lemon. I also got some straw and grapes with a nice yeasty undertone. There was a hint of clove, too.
T-Follows the smell pretty closely, i.e., quite lemony and refreshing, but a bit sweet by the end of the bottle. Finish had some green apple flavors and just a hint of malt. Not much in the way of hops.
M-Lighter bodied with some prickly carbonation. Really easy to drink.
O-I enjoyed this, but felt there was something just a little off. Perhaps it needed more carbonation to balance the heavy lemon flavors that almost overwhelmed me. Still, it was refreshing and I'd give it another shot.

Bought blind at the new bottle store next to "Local 44" a bar in West Philadelphia.
It's a Saison, not my favorite style but it's a good version of it. The nose is enticing, giving off lemon peel and Christmassy-type spices. Also a wonderful, almost cloying mouthfeel to this -- this beer doesn't seem to want to quit, lingering on the tongue much longer than you'd expect.
The flavors themselves are pretty much what you'd expect for the style, lemon oil and spice (here a pronounced white pepper) overlaying some subdued hops and later a dry finish with a very pleasant vanilla kick at the end.
I prefer the related biere de garde style, which I always considered to be a hoppier, less spicy/fussy variant of this general idea. But if you like saisons you should definitely give this a try, it's a very respectable American take on the style.
