Goose Island IPA on tap
Aroma moderate hop floral aroma with subtle spicy hints
Appearance clear golden with a 2 finger white tight head with great lacing
Taste very balanced mild malty with the hoppy finish on the back end that stays for a short time. No overly hoppy like some if the newer IPA's
Mouthfeel. Moderately carbonated crisp clean finish
Overall a drinkable IPA not overly hoppy which is pleasant for a guy who is not a big fan if intense hop flavor

Served in an imperial pint glass at the Clybourn brewpub.
Did I miss the O'Hare IPA? Daggum it. Anyway, this stuff pours a clear sunset amber topped by a finger of lightly dusty cream-white foam. The nose is fairly light, comprising grapefruit, pineapple, red apple, and caramel (which comes through a tad denser than the other elements, though not by very much at all). The taste holds notes of pineapple, red apple skin, light pine sap, caramel, and lemon zest. The body is a light medium, with a light moderate carbonation and a fairly dry finish. Overall, a nice, fruity IPA, but nothing to rave about.

Had on Tap. This was a solid IPA, but nothing crazy good. POured a golden amber, dark honey. Limited head, limited lacing. Scent was more sweet than piney, had some fruity and honey in the scent. Taste was more hopped and resiny but the overall taste was not of hops but of a balanced sweetness and bitterness. Very drinkable. Overall, a solid offering and not one id turn down, yet wouldn't go out of my way.

I had this on tap at the Clybourn location.
A: Poured a clear, harvest orange-brown color, with a slight head that retained itself for a good while.
S: This was a total fruit bomb, without much pine presence at all. No bitterness either... Sort of like a melted Popsicle.
T: I'll take that back: Sort of like melted orange sherbet with a few hop notes. This was fruity as hell, and the bitterness grew the more I sipped, but still not too much.
M: This was measly carbonated and a good bit of lacing was left on the glass, and orange peel left on the palate.
O: True hopheads might be turned off by the upfront fruitiness as opposed to hop sizzle, but I dug it overall.

Cask Conditioned at the Clybourn pub from notes, consumed Dec 24.
A: Amber color, somewhere between copper and honey. It has a really nice big creamy head, no apparent carbonation. Not quite opaque but not transparent either, no noticeable sediment.
S: Mild hops, biscuity malt. Citrus, mostly grapefruit and lemon zest from the hops, toasted biscuit from the malt, hints of something else, like coriander, but overall the nose isn't very powerful or overly intriguing.
T: Juicy citrus right away, very pleasant and unexpected, nice resinous pine flavors as well, big finish of sweeter malts but still has a nice bitter kick at the end. Nicely balanced and the juicy citrus was really wonderful.
M: Nice creamy full body from the cask. The head stays around for a long time and adds another layer of creaminess. The juicy citrus flavors are really brought to life by the cask conditioning and the lack of carbonation takes away from any fizzy bite it may have had.
O: Really nice on cask, my dad had the non cask version at the same time and in my mind the cask took the cake. The cask texture really aided the hoppy elements that were a bit lackluster in the draft pour. This is a pretty darn good IPA that if you can try it on cask, try it, if you can't, just get a growler of the regular stuff!

A - Amber colored beer, no haze, with a bit of a white head that had some good retention and left a decent bit of lace on the sides.
S - Floral and citrus hops in a standard smelling IPA with a fairly strong malt backbone.
T - Really not a whole lot going on here that is very distinguishing. Lighter taste than expecting for 6%, with some citrus and floral hop flavors. Strong malt backbone.
M - Ligher bodied with medium carbonation.
O - Fairly easy to drink, not great, but can get it down and don't mind it.

Enjoyed an Imperial Pint Glass of this stuff straight from the source! Awesome!
A: A dark orange/copper body that support a fairly large cream colored head. Really impressed with the head retention, as well as the lacing this beer left behind.
S: A ample amount of citrus fruits to go along with a strong malt backing. Both worked in harmony to create a very well balanced IPA aroma.
T: I could have sworn this was listed as an English style IPA, but the flavor profile resembles more of an American IPA. Complex and somewhat bold malt body that balances out an evenly distributed hop bitterness.
M: Light and creamy...all at the same time! Hard to explain, but this place does "CASK" right!
O: A great freaking beer! Nothing really stood out in particular, but the culmination of flavors, smells and mouthfeel made this brew ever so easy to drink. A must try! Cheers!
