Had this on draught at a special Belgium event at Chappy's in Dayton -- served in a special 6 oz wine-like tasting glass.
A: Dark brown amber with a brown head and some nice lacing.
S: Dark fruit flavors, plums and dates.
T: Initially a bit of chocolate flavor that turns into black licorice taste. I don't normally like licorice, but it works well in this beer. Fruity and spicy tones such as plums, dates and raisins.
M: Medium bodied, well carbonated.
D: Delicious on it's own, or would go well as a dessert beer. One of my favorites Belgium Christmas beers, what a pleasant surprise to see it available in the Spring.

I drank this from a tap at the Map Room into a chalice.
The beer pours dark brown with a light tan decent retention and lacing.
The aroma is light with a little spice, same thing with the taste.
The feel is ok, the drinkability is limited.
Overall, not a great the feel is to light, the taste is light and too much spice.

2008 release, on-tap 12/29/09 at Julian's in Providence, RI, served in a snifter glass.
A: The beer is a bright crimson color, with a large off-white head that fades slowly and leaves a thick lace on the glass.
S: The aroma is of caramelized malts, Belgian yeast, dark fruit and some spice.
T: The taste is fruity with strong flavors of cherries, other dark fruits and brown sugar. Then a bready Belgian yeast and hearty malt character follow. The hops presence is mild but complementary. The after-taste is slightly sweet.
M: Crisp and very smooth, medium body, medium carbonation, finish is clean for the style.
D: Tasty, goes down dangerously easy, not too filling, deceptively strong kick, good representation of style, this is a nice stronger Belgian-style beer to drink for a while until it starts to catch up with you.

On-tap at Beachwood BBQ,
A: Pours a dark mahogany, burnt umber colour, with a nice finger of off-tan head, good Brussels lace.
S: Definite candy sugar, candied fruit, butterum candy, sweet smelling if you get my drift.
T: Heavy notes of brown sugar and characteristic Belgian fruit esters. Chocolate covered cherries, orange marmalade, molasses and raisins are clearly evident. Clear Belgian flavour and character.
M: Smooth and silky, not terribly robust, but it's there for sure. Very soft carbonation.
D: Way too drinkable for it's size, great flavour, this beer could be dangerous at a Christmas party.

Kinda boring looks on this one, little to no head, minimal lacing on the glass, a dark hue of red/brown that is quite appealing though.
Damn! This smells really nice of star anise, liqourice is abundant, but it really seems to be well fitted into the brew, I get some sweet notes of malt and some other spices as well, but the liqourice is slightly overpowering.
A bit on the boozy side, and the sweetness doesnt really match it. A great deal of liqourice in on the palate as well, really lots, almost a bit too intense, some other spices that are hard to place, maybe ginger? Anyway, the liqourice is well integrated into this brew, if they just had kept it a little bit more mellow, as it is now it is a bit too overpowering.
Feels a little too boozy in the mouth, and it has a fairly weak carbonation not the creamy muouthfeel I usually delight in with this kind of belgian brew usually.
Still a very interesting beer! Love how they have gotten such an intense liqourice-attack without it just mashing the rest of the brew to shit, try it if you can, special!

Reviewing from last night's notes. On tap at Novare Res, 10oz pour into a Goulden Carolus chalice
A: Dark, murky red hue with no head. Doesn't leave any lacing
S: First thing that strikes me is that this beer smells like black licorice. A nice anise scent with some other spices including ginger
T: Very smooth, black licorice taste. Malts make their presence known. The alcohol is fairly present, similar to sambuca. Nice at first, but tough to bear as I continued to drink
M: Creamy and smooth. Good carbonation. Light to medium bodied
D: Incredibly easy, although the anise taste is a little much towards the end. One and done for me, but glad I could try this

A 2008 version served on tap into a tulip at Amsterdam Ale House. Pricey, but hey, it's the holiday season, so why not?
Appearance: A nice dark reddish brown, with a big honkin' tan head that leaves big time lacing.
Smell: Picking up a good dose of yeasty white bread, and then the sweetness pounds you. Brown sugar and plum mostly for me.
Taste: Well...not so good. The sweetness is overpowering. It tastes like purple Robitussin. If I start tripping balls, I'll think the bartender switched it up on me. The "tussin" taste is a mix of plum and strong alcohol. Now, generally I don't mind a boozy beer, but this one's all out of balance.To be fair, it gets better as it gets warmer, as some nutmeg and other festive spices start to show their head.
Mouthfeel: The booze dominates the mouthfeel as well. I don't mind that all that much. Other than that, it's got a medium body and good carbonation.
Drinkability: The tussin quality kills this one for me.

On tap at verdugo, labeled as christmas not noel,
I feel like this is a different beer from the "noel" ive had in the bottle...
aroma is a big shot of anise/black licorice with a little bit of sweet malt behind.
flavor is dominated by the same anise, some dark fruit, sweet malt and a light blend of other spices.
not the most enjoyable christmas beer ive had, way too much licorice not enough malt...have had this out of a bottle and dont remember it being like this...

Poured a deep dark amber hue with a one finger foamy white head. There was good retention and lacing.
The smell featured a raisins, dark friluit and some pine. Estery as well.
The taste consisted of a sweet caramel, raisin, candy sugar and a touch of alcohol.
The mouthfeel was typical of the style.
Overall a tasty and complex strong ale.

Had this on tap at the Lucky Baldwins 10th Annual Belgian fest on 2/15/09.
Pours a clear dark brown/red color. 1/2" head. Decent head retention and lacing.
Aroma is of a belgian brown ale. Sweetness and black licorice are present.
Flavor is of roastiness, sweet cherry, black licroice, and caramel. Wonderfully complex and interesting. A little peppery too.
Body is medium and very drinkable.

on tap @ blind tiger ale house.
Poured a dark ruby body with a slight off white head. Disappeared very quickly into a small cap, leaving very light lacing along the tulip.
Aroma is extremely sweet and nice smelling. Sugary caramel, molasses, gingerbread, and tons of cinnamon. Honey-coated plums lurk in the background. Extremely nice smelling - the cinnamon is very pleasing.
It tastes pretty much how it smells - although sweeter, which is not a good thing. The cinnamon aroma takes somewhat of a backseat to the honey coated dark fruit and molasses, and it's just too sweet. It's nice to sip on (it went well with my lunch there) but it just got old halfway through the glass because of its intense sweetness.
Mouthfeel is decent, as it has somewhat of a soda-like feel to it. Very odd. It's full bodied with a slightly syrupy mouthfeel. This is not a poor brew by any means, as it definitely has one of the more unique and pleasing aromas I've encountered recently. It's just not my thing, way too sweet. The mouthfeel is kind of "off" as well.

I really enjoyed drinking this beer. Didn't have a strong alcohol flavor. Had a beautiful malty fruity flavor. The Map Room in Chicago described a banana flavor and although I'm not one to compare beer to fruit very often, I would say their description was pretty good. The taste is very complex where every sip evolved into a different flavor.

A- pours a really really dark brown , that I would almost say black, but when I held it up towards a light i could see it was more brown than black, has a small off white head with a good amount of froathy inviting lacing
S- chocolate and black Licorice, some light cinnamon as well
T- the black Licroice really stuck out in my mind, the chocolate was also there, it finished with some other wonderful spics, maybe ginger... not overly sweet very very pleasant
M- really smooth, goes down alot easier than I thought it was considering how dark it is
D- normally I dont give such high marks for such a high abv beer... but wow this is hidden so very well.. I would have guessed this beers abv to be about 5.5
Im gonna go out on a limb and say this one is kinda rare... but even it isnt drink this one up and enjoy

Rum butter, toffee, candied fruit, roasted malt, a little chocolate, and bubble gum sneaking through; but intensifying in the finish with chocolate covered raisin and blue fruit. Gentle hop bitterness in the back. Fantastic mouthfeel and very good drinkability.

I had this one when waiting for a Bear Republic tasting at David Copperfields.
A: Served in goblet to reveal a murky velvet dark crimson color with a khaki 3/4 finger of a head that settled into a tight cap with strong retention.
S: The nose was full of dark fruit and coco but not overpowering.
T: I knew the abv of this beer before I ordered and could not believe how undetectable it was. Gouden Carolus is the most lucsious Belgian Dark Strong Ale I've ever had. Enormeously rich cand Syrupy sweet. The malts do not have a spicy bite at all. Brown sugar, dates and figs mix together to deliver a smooth fruity package.
M: The smoothest delivery I can recall in some time. The rich texture of this beer slides through your lips around your mouth and down your throat with complete ease, all along tasting yeast, spice and lost of candy.
D: I could not think of a better beer to go with various occasions. A wallop of sweetness packed with power and a smooth delivery make this an exceptional beer.

Freshly tapped in a Gouden Carolus chalice.
Cast a dusky magenta, showing lighter crimson at the edges.
Slim beige head.
Gorgeous aroma. Sweetness. Cocoa. Dark fruit. Creamy. A raisin wrapped in chocolate, dipped in brandy, set on fire. Wine-like, at times.
Slick, sweet and delicious on the tongue. Slips through the mouth and tickles the senses. Warm, and wonderful. Molasses, brown sugar, figs, and carob. Then the booze speaks up. And I agree with everything it's saying.
Long, warming finish. Never too hot, never too sweet, just right.
Spice + fruit + magical Belgian malt and yeast = perfection.
Yum meets yum.
This is just right for tonight. It's what 3 below? Holy Cow!
I have half a mind to stay right here and finish the keg. Sounds like a plan...

On tap at The Red in Santa Cruz. Dark cloudy brown color with a creamy tan head that leaves nice lacing. Aroma is boozy with lots of orange peel, cinnamon, and fig. A little too boozy for me though. Flavor is similar; there's a sweet dark maltiness doused in fusels with tropical and dark fruits and heavy spicing. Full bodied and warming, not hugely drinkable from all the alcohol.

Had this on-tap at the Brick Store in Atlanta.
Pours a clear deep brown color with a one-finger white head. The head dissipates into a patchy layer of bubbles on top and a medium-sized ring around the glass. The lacing leaves a nice webbing on the glass.
Smells of licorice and anise, alcohol, and dark fruits, in that order. Very interesting.
Tastes similar to how it smells. Sweet Belgian candy sugar hits up front for a split second before it's overtaken by licorice and anise. The licorice and anise stick around all the way through the aftertaste.
Mouthfeel is good. It's got a very nice thickness that's backed up by subtle carbonation. This goes down smoothly.
Drinkability is good. I'm not the biggest fan of licorice, but I still like this beer. Just know what you're getting yourself into.
Overall this is one of the more interesting Christmas beers that I've tried. Give this one a shot if for no other reason than for how unique it tastes.

I tried this on tap several months back at the Kulminator (it was only a couple weeks old from the brewery), but my notes were unfortunately somewhat sparse. That said, here's what I wrote down:
Dark in color with a nice off-white head. Smells and tastes of dark malts with a heavy anise overtone; very smooth and rich, with a medium body. Drinkability suffers a little from the heavy taste of anise and the high abv, but it's still an awesome beer that's definitely worth trying.

Appearance: Pours a deep, dark chestnut brown body topped with a quarter inch off creamy, off-white head. Very thick, very coating lacing as it goes.
Smell: Earthy, spicy, malty nose with notes of anise, prune, black currants and, wait, is that Jäger I'm smelling?
Taste: Sweet caramel, spiced molasses, black licorice, and candied fruits blended with a full shot, no, make that two shots of Jägermeister. The heavy malts, fruits, and bitter herbal liqueur all vie for dominance. Who's the winner? Well, I'll just say you get a bit more Jäger on the dry finish.
Mouthfeel: Medium-full body. Medium carbonation. Chewy mouthfeel.
Drinkability: Grr, when I get my hands on whoever dropped a shot of Jägermeister in my Gouden Carolus Noël, I'll take my shoe to them!

Pours a dark chestnut brown with a large forhty head. Very malty, spicy aroma with hints of dark fruit, chocolate and pepper. Sweet matly alcohol taste up front with a dry, peppery finish with hints of raisin and dark cherries.

[Eyes] Dark brown like the classic color with a moorefoamy white head.
[Nouse] The aroma is festive and strong... Christmas fruity with hints of banana, malt caramel, yeast, vanilla, and brown cuban sugar.
[Mouth] Great Full body with nice and gentile carbonation, notes of flavors of sweet, strong fruits, sugar and yeast. The Afther taste is long and sweet with a touch of caramel and vanilla. mmm!

On tap at Max's the other day.
The beer pours a a dark brownish amber color with very good head retention and lacing. This beer looks impressive. On the nose I get some cherry, cola and spice, all of which combines very nicely to make the aroma very enticing. On the palate this beer is just delicious. There is a delightful maraschino cherry flavor, coupled with cola, vanilla and chocolate. The beer is medium sweet, with a very long, smooth, rich finish. This beer is just decadent. Alcohol is pretty well disguised, though you can tell it's up there.
An excellent X-mas beer. The best I've had this year so far. Good stuff.

Sampled on-tap at the Kulminator in Antwerp, Belgium...
Pours a murky dark brown with tinges of mahogany topped by a frothy tan head. Smells quite yeasty and spicy, breadiness, cinnamon, clove and some strident aniselicorice aromas.
Taste evokes the holidays! Cinnamons, ginger, cloves and nutmeg are evident. Dark fruit and breadiness with a fair amount of anise. Very full bodied with a sweet finish and sweet spice and licorice in the finish. Nice warming from the ample alcohol as well.
Lovely x-mas beer!

Had this on tap at the Brick Store Pub in a Gouden Carolus glass. Poured a very dark brown, almost black with a decent head that fades somewhat quickly but that leaves some excellent lacing. Lots of licorice and anis aromas coming from the glass, and the same is true of the flavors. Licorice up front, followed by a delicious sweet breadiness, followed by a hit of anis on the finish. The mouthfeel is big and creamy, and though it's got a high abv, its not hot at all. Overall it is a wonderful winter warmer with a slightly different flavor profile from the rest.
