Mad Mex Robinson I'm going to say thanks to Nick, he's one of the bartenders/servers who has had experience working at the Sharp Edge Creekhouse. Needless to say I know he's a fan of Gouden Carolus Tripel and if he saw that they could get a keg of the Noel I'm sure he swayed somebody to make that decision. Appearance: Deep ruby brown light white bubbly effervescent head scattered lacing on the chalice. Aroma: Deep plum spiced nutmeg and other chirstmas spices infused with warming alcohol fruit notes of raisins and apples, nice. Taste: Strong sweetness layers of spice, fruit, and alcohol complexities. Not quite as solid as it has been in the bottle, but damn good nonetheless one of the best Belgian Christmas offerings. Mouthfeel: Medium bodied solid carbonation effervescent tickles the palate a bit. Drinkability: A winter warmer of a devine caliber draft was an experience definitely amazing in the bottle but still great flavorful experience on tap.

S: Black liquorice comes off with some hints at spice, fruits

T: Blacl liquorice is dominant, not over the top but the dominant flavor. Some carame, spice, dark and medium fruits

M: Nice and subtle, not to sweet, no carbonation issues

Been sitting on this one for over a year.

Poured into a tulip a nice brown color, nice carbonation, nice one-finger creamy off-white head, some nice sticky lacing follows. The nose is malty with some yeast, figs, raisins, plums, and some nice tones of caramel. The taste is slightly sweet, malty, very nice tones of dark fruit and caramel. Medium body, a nice balance/complex brew. Very drinkable, another awesome brew from these guy's, highly recommended.

Pours a two-fingered creamy white head that fades slowly to a thin layer leaving some lace. Cloudy mahogany color. Strong carbonation and medium-heavy bodied. Raisin/plum nose. A- This beer has a deep dense brown body with a fizzy sounding light tan creamy head that beads lacing on the glass with each sip. There is a sea of microbubbles that glide up the side of the glass.
S- This beer has a brown sugar aroma with hints of cider and a slight woody note that takes on more of a cardboard quality as it warms but in a pleasant way.
T- The slightly sweet dark toffee flavor has brown sugar notes and some brown malt qualities about it with a soft alcohol note. The dry caramel flavor blends with a cider hint and a dry spice flavor in the finish grows as the beer warms but still remains soft and mysterious.
M- This beer has a light mouthfeel with a very fine fizz that fills out the mouthfeel with each swallow. There is no real alcohol heat noticed.
D- This beer has a dry but fruity quality to the flavor and it rich but well blended in its complexity with flavors working well together. The alcohol is very well hidden.

Large bottle, cork and cage, pours dark brown, murky and cloudy, dark tan head, good retention and well developed sticky lacing. Nose is strongly anise, ginger, alcohol and burnt fruits. this is a lovely and complex BSDA. Alcohol evident, warming. Notes of dark sugars, burnt fruit, smoke, vanilla, bananas, jam, dark malt. This strong brew has it going on in many directions. Fine winter treat.

Poured from a 12 oz. bottle into a pint glass.

a - Pours a brown color with about a finger and a half of off white foam. Moderate carbonation evident.

s - Smells of dark fruits, some bready malts, and booze. Maybe a hint of some spices as well.

t - Tastes mostly of dark fruits, especially raisins and dates.I also got a little bit of banana, as well as the taste of sweet malts and a tiny hint of booze, but not as much as in the smell. Pretty nice.

m - A sticky sweet taste with a medium body and little carbonation. A little alcohol taste to it but considering the ABV not too bad.

d - I thought this was an above average Belgian. I enjoyed the sweet smell and taste of dark fruits and sweet malts, and would definitely try this again.

Had on tap at Armsby Abbey Ho-Ho Belgian Christmas.

Light creamy head, little lacing, dark molasses brown ruby color.

Nose complex and weird, holiday spices cinnamon, clove, nutmeg maybe, hints of citrus, booze, light coffee, creamy malts and caramel, molasses, candi sugar, OK but just all over the place.

Taste malty, caramel malts and reddish malts galore, semi sweet, light candi sugar and molasses, light biscuit, vanilla, spices with more holiday spices, little creamy, earthy and herbal little tannic flavor probably from the spices or barely detectable hops. Light estery booze. Finishes a bit boozy, drier but sticky syrupy feel, more spices and caramel reddish malts, hint of dark fruits finally.

Mouth is a bit heavier bodied, decent carb, warming almost tingly booze.

Overall nice except the earthy herbal tannic taste I'm not a fan of. Decent spices held in check, great almost barleywine malt profile, tasty and decent booze profile.

Enjoyed at The Moan & Dove, Amherst, MA. Presented in a almost straight-sided Saison DuPont glass.

Arrives with a 1/4" beige head above the dark caramel-hued brew. Head is somewhat short-lived, yet exhibits good lacing. Aroma is sweet malts with an alcohol tinge. Taste follows the nose, with spicy Belgian notes. Mouthfeel and drinkability both excellent. Excellent holiday brew.

A 750 mL corked & caged bottle from this past release...
Appears a murky, amber-toned brown with a small, creamy tan head that slowly fades into a floating cap of milky froth. Plenty of scattered chunks of lacing are left around the glass.
Smell is of fig, raisins, caramel, candi-sugar, apples, anise, cinnamon, molasses, and brown sugar.
Taste is of the blended aromas in a sugary, plumy mix that has hints of tobacco leaf and doughy yeast.
Mouthfeel is medium/full bodied, sugary sweet up front with a smooth, warming cake-like dessert enjoyability.

12oz bottle into a goblet.

Pours a deep, dark amber with a fairly nice sized poof of tanish white head retained well into a nice foamy covering. Lacing was good. Aroma is sweetness, yeast, deep notes of dark fruit, and alcohol.

Taste is dark malts, candy sweetness, mellow dark fruits, spices. Finishes with a fizzy bitterness and then a splash of sweetness and warmth. Mouthfeel is effervescent yet velvety. Alcohol is present but not overly noticeable, instead imparting more of a warming sensation.

Lots of deep notes of sweetness and spices and a warming alcohol effect make this a perfect Belgian beer for sipping by the fire during those cold winter nights.

This beer has a murky muddy brown appearance. A slight beige head sits on top. Lacing is only adequate. The aroma has a sweet rock candy like presence. Very inviting. A little malt as well and hints of alcohol. This beer is nicely put together. Many layered complexities emerge through the drinking process. First, the alcohol makes its presence. But that takes a backseat in no time at all as the waves of candy, fruit and malt take over. But then the alcohol comes back and stays for the duration. Signs of wood and yeast come and go as well. But the alcohol taste is the mainstay, and for that reason, I dock the drinkability and give it an avg. rating in that department. The lingering bitter alcohol taste is not pleasurable. Looking past that one minor fault, I'd say this is pretty good, but I'd not spend the big bucks for it again.

Pours a dark chestnut brown with a large forhty head. Very malty, spicy aroma with hints of dark fruit, chocolate and pepper. Sweet matly alcohol taste up front with a dry, peppery finish with hints of raisin and dark cherries.

This is a review of the 2008 brew which was stored at the brewery for two years and opened at the 16th Essen Christmas beer festival 2010.

My bottle review wasn't overly kind to this beer, what a diffence a couple of years in a cask makes!

The liquorice flavours that almost ruined my bottle review were almost completely gone, to be replaced by blackberries and plums.

The aroma was Port like with sweet molasses and Christamssy spices added, as was the rich taste and mouthfeel. Someone mentioned 'cough sweets' in the beer tasting notes at the festival and that is a good choice of the words too. That liquorice flavour from my bottle review now coming back into play as the mouth dries giving the beer an alcoholic, malty, cough sweet sort of taste.

Anker matured this specially for two years, I thank them for that.

On tap at Max's the other day.

The beer pours a a dark brownish amber color with very good head retention and lacing. This beer looks impressive. On the nose I get some cherry, cola and spice, all of which combines very nicely to make the aroma very enticing. On the palate this beer is just delicious. There is a delightful maraschino cherry flavor, coupled with cola, vanilla and chocolate. The beer is medium sweet, with a very long, smooth, rich finish. This beer is just decadent. Alcohol is pretty well disguised, though you can tell it's up there.

An excellent X-mas beer. The best I've had this year so far. Good stuff.

Had this on-tap at the Brick Store in Atlanta.

Pours a clear deep brown color with a one-finger white head. The head dissipates into a patchy layer of bubbles on top and a medium-sized ring around the glass. The lacing leaves a nice webbing on the glass.

Smells of licorice and anise, alcohol, and dark fruits, in that order. Very interesting.

Tastes similar to how it smells. Sweet Belgian candy sugar hits up front for a split second before it's overtaken by licorice and anise. The licorice and anise stick around all the way through the aftertaste.

Mouthfeel is good. It's got a very nice thickness that's backed up by subtle carbonation. This goes down smoothly.

Drinkability is good. I'm not the biggest fan of licorice, but I still like this beer. Just know what you're getting yourself into.

Overall this is one of the more interesting Christmas beers that I've tried. Give this one a shot if for no other reason than for how unique it tastes.

On the pour, the beer appears to be a somewhat caliginous cherry red color, the head Bunyanesque in size, the texture creamy, with sticky sheets of lace to caress the glass. Nose is fruit sweet, over ripe apples and or banana comes to mind, malt tones and light caramel hints also present a treat for the old honker to sniff. The start is honey sweet, the top lean, the finish is pleasantly acidic, cheerfully hopped, dry and somewhat alcohol bitter aftertaste. Yes, it does “Warm the Tummy”, and should definitely be put in the “Winter Warmer” category. If you like strong high ABV beer this is a must try, but you may find it a bit pricey at $10.49 a 750ml bottle. Personally I don’t mind the price, because “I’m Worth It Baby”!

As a revisit, this is the 7th beer on my 2008-9 Belgian Winter Ale tasting "panel"; no freshness info. is provided on the label/bottle, served just cool, not chilled, in Hapkin's tulip-shaped bowl sniffer.

A: pours a deep mahogany hue with very moderate steams of carbonation and a huge dark beige froth that sustains remarkably well, leaving untidy lacing all round as it finally dissipates... Considering how clear the liquid and the bottle are, I suspect this ale might be filtered rather than bottle-conditioned?
S: utterly aromatic, with lots of caramelised apples, overripe black plums, and sweet herb-tea to ride on top of a deeper layer of jammy dark fruits/black-berries, hawthorn-fruit candy, highly fruit estery notes, black-sugary bitter-sweetness with a touch of treacle. Thickly fruity, showing a great depth and body already on the nose, but never alcoholic or sharply estery.
T: a smooth and lubricating swallow of syrupy black malts, jammy black/blue-berries, raisins, plus mild spiciness (like a treacle fruit-cake flavoured with cinnamon, ginger and powdered licorice), is subtly balanced by a mixed herbal essence like black herb syrup plus an intriguing flow of flowery/grapey fragrance (almost like the Muscat grape). Lightly oily in the finish, but not thick or cloying at all due to the contribution of a deepening bitter-sweet herbal touch from hops and yeastiness.
M&D: incredibly smooth on the palate with a lubricating mouthfeel and very little carbonation, this is a dangerously drinkable X'mas ale that has a 110% flavour and body to offer than meets the "tongue"... The overall complexity is decent, but somehow the sweet side of the story does manage to dominate the second part of the mouthfeel and renders an eventually, slightly sour-fruity edge like all sweeties. Apart from this, I have no complaint at all about this ale.

* Tasting Date: 07/06/06
Coming in a 330ml brown bottle, BB 09/08/08, served lightly-chilled in a large Burgundy bulb wine glass.
4 A: deep dark ruby hue, creamy but restrained layer of off-white head, slowly settling down and leaving very tight lacing.
4 S: deeply perfumy fruit-esters and sticky sweet fruits (ripe black cherries+fig jam+raisins+banana-oil yeasty), slightly alc. winey, but less syrupy than the tap version; an assertive, thickly-textured caramely maltiness stays firmly in the background, laced with a touch of creamy coconut-milk and burned palm-sugar. A touch too sweet to my liking, but not cloying by any means.
4 T: a mildly sour-sweet raisiny flavour comes along with plenty of preserved fruits upfront; the ensuing profound dark-malty overtone comes rather light, neither heavy nor sticky on the palate; gradually a semi-dryish sweet undertone of dried fruits, licorice and yeasts develops, leaving a faint trace of warming alc. lurking deep down the throat.
5 M&4.5 D: incre...dibly smooth and light on the mouthfeel, where the ultra-subtle carbonation is balanced well with the velvety-smooth texture and a slightly tangy kickback as a healthy balancer. Overall, not terribly complex, but this bottled-version outperforms the tap version by a mile, for its delicate body and balance, easily tricking one (me, at least) to believe it's a 7-8%abv.(at most) dark ale. Extre...mely dan...gerously drinkable it is, yet utterly enjoyable be it X'mas, Easter, Chinese New Year, summer solstice, or whichever else occasion.... Cheers!!

Poured a deep dark amber hue with a one finger foamy white head. There was good retention and lacing.

The smell featured a raisins, dark friluit and some pine. Estery as well.

The taste consisted of a sweet caramel, raisin, candy sugar and a touch of alcohol.

The mouthfeel was typical of the style.

Overall a tasty and complex strong ale.

Gouden Carolus Noël conceals its Christmas cheer. At a glance it might appear dismal and dusky, like a cold winter night, but if you hold it right up into the light you'll see that it is in fact bedecked in a glinty scarlet red wrapping. Its head, though much dissipated, is just like a garland wreath and steadily remains tightly knit around the beer's perimeter.

Belgian Strong Dark Ales - the good ones, anyhow - all smell of spice and sweet malt and yeasty dried fruit-like esters. This has all those qualities as well as something extra. There is the distinct scent of black licorice (the alcohol combines to make it resemble a throat lozenge); if anise wasn't used in the recipe I'd be shocked. The aroma, I finally realize, smells exactly like how plum pudding tastes - how appropriate for a Christmas beer!

Every Het Anker beer I've tried to date has tasted fantastic - this one included. Once again, plum pudding makes a convenient way of summing it up. To leave it at that, however, would be being too simplistic; the beer is layered with flavour. A gift basket of spices - anise, coriander, clove, ginger root - spruces up the taste of brown sugar-coated roasted yams. Sweet, toffee-ish malts and dark fruits are also ever present.

This thing has legs - it keeps running from flavour to flavour. The mouthfeel, too, has plenty of dimension; it shifts between sticky-sweet and spicy. It's like drinking caramelized brown sugar and a liquefied plum pudding. The texture is lush and the alcohol procures a Grand Marnier-like aftertaste. It will warm your holiday spirit but isn't likely to burn it.

Of all of Belgium's great breweries I'd have to say that Het Anker has to be one of the greatest. And while I recognize this as just my opinion, I'd leave it up to anyone to try this Noël beer (or their Tripel or their Classic or their Cuvee de Keiser, etc) and try and argue me. I just assume the town of Mechelen has a traditional Christmas carol that makes some mention of this beer - because if it doesn't already, it definitely should.

A: Chestnut brown without any sediment, tan head, little retention, nice lace.

S: Dark fruit, orange rind (Curacao?), pleasant non-descript spicing, floral hops, fruit bread with candied fruit. More alcohol as it warms.

T: Very fruity, candied fruit, dark fruit, bready, nice spicing, marmalade, slight bitterness, alcohol is remarkably subtle.

M: Well-attenuated moderate body, moderate carbonation, warming alcohol finish.

D: Quite drinkable for its strength.

Had this on tap at the Brick Store Pub in a Gouden Carolus glass. Poured a very dark brown, almost black with a decent head that fades somewhat quickly but that leaves some excellent lacing. Lots of licorice and anis aromas coming from the glass, and the same is true of the flavors. Licorice up front, followed by a delicious sweet breadiness, followed by a hit of anis on the finish. The mouthfeel is big and creamy, and though it's got a high abv, its not hot at all. Overall it is a wonderful winter warmer with a slightly different flavor profile from the rest.

2004 Bottle: Sample at WFM. Dark brown with a thin beige head and decent lacing. Lots of sweet malts and spices in the nose. The body is pretty chewy with more sweet malt, ginger and fruit flavors. The finish is flavorful, with more spices and a nice woody character. The alcohol is kept in check very well too, making for an enjoyable brew from start to finish.

Everything about this beer seems to be black - color is a super blackened ruby oil capped by a tall, softly whipped yet lumpy, cinnamon dusted, light tan head. Settles off to a thin, uneven skim and the lacing is whimsically placed in thin and webby broken sheeting.

Aroma is airy and pleasantly soft yet robust of black licorice, dirt, and the blackest of black malts without much sweetness at all. Cindering hints of bright pepper phenols and anise percolate right over the top.

Taste nearly mirrors the aroma with a tender sweet black malt, fainter dark fruity nuances, and cola sryup masked in a ever present black licorice spice. Finishes with shadowy cinnamon, anise, ginger, minty skoal tobacco juice, earthy pine needles; quick, yet muffled, phenol laced alcoholic heat, some leftover cola sweetness and a drying of light throat burning sweetness.

Complexly characterized in girth that sits just above a medium body but somehow keeps a general softer sweetness and spice that's magnificently handled. Lots of subtle spicy layering and a finely heated throat burn, belly warming, and mind-boggling play between sweet and dark; and, warm and spicy. Fun stuff. It really grows on ya as you engage in its presence.

Even with all its finely set warming and spice this makes for a really nice drinker and an even finer treat. I'm becoming more of fan to these Noel/Winter Warmer-type brews and I'm thinking Winter isn't really that bad here in MN as long as I have this kind of beer around to keep me company.

330 ML bottle picked up at the Boise Coop for $4.75; poured into my standard red wine glass.

Pours a deep burgandy red with a nice 3/4 inch lite tan head. Crystal clear and with no yeast haze (the bottle says "refermented in the bottle, I don't believe it") and absolutely no yeast left in the bottle.

Aromas of fruitcake and spices ... almond cake ... make that rum cake, but all of that plays a second fiddle to the sweetness and the "yeastiness".

Wow, I must start paying better attention to Belgian Holiday brews .... this is really good .... really really good. Definately a sipper, but no reason to hold that against it. Flavor is complex and at the same time all over the place ... it bounces all over your tounge. Sweet, peppery ... I get ginger and a little sweet orange peel.... maybe a little metallic but I could be imagining things. I can't say it enough ... big and uniting fruitiness ... plums, cherries and applesauce. Finishes enough oddly enough with a long but lite and lingering young port. Nice carbonation, but possibly a little aggressive; sorta lightly rips the flavors away, I think it would be fine with a slightly less carbonation level.

Don't know what to say about this brewing company, I remember loving their amber and triple... but this was something pretty special. I will probably pick up a 4-pack for the cellar even though I don't believed they're bottle conditioned.
