Our Weizen Dopplebock is dominated with 60% wheat that imparts a nutty-bisquit flavour. It is complimented with Perle and Hersbrucker hops.

Pours clear caramel with with a nice pale tan head. Aroma offers average caramel and toasted malt notes. Flavor ups the caramel and tossed in a little tart apple. Mouthfeel presents typical body and fizz. Not exactly devilish, but serviceable.

12 ounce bottle into weizen glass, bottled on 11/18/2016. Pours hazy deep reddish copper/light brown color with a 1-2 finger fairly dense and fluffy light khaki head with great retention, that reduces to a nice cap that lasts. Nice spotty soapy lacing clings down the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big raisin, plum, peach, pear, apricot, red apple, banana, bubblegum, clove, caramel, brown sugar, toffee, brown bread, toasted biscuit, light nuttiness/roast, herbal, grass, and yeast/toasted earthiness. Damn nice aromas with great balance and complexity of fruity/spicy yeast and dark/bready malt notes; with great strength. Taste of huge raisin, plum, peach, pear, apricot, red apple, banana, bubblegum, clove, caramel, brown sugar, toffee, brown bread, toasted biscuit, light nuttiness/roast, herbal, grass, and yeast/toasted earthiness. Light herbal bitterness and yeast spiciness on the finish. Lingering notes of rfaisin, plum, peach, pear, apricot, red apple, banana, bubblegum, clove, caramel, brown sugar, toffee, brown bread, toasted biscuit, light nuttiness/roast, herbal, grass, and yeast/toasted earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/spicy yeast and dark/bready malt flavors; with a nice malt/bitter/spiciness balance, and zero cloying sweetness after the finish. Minimal dryness. Medium-high carbonation and fairly full body; with a very smooth, creamy, bready, silky, and rich mouthfeel that is awesome. Minimal warming alcohol for 10.5%. Overall this is a fantastic weizenbock! All around outstanding complexity, robustness, and balance of fruity/spicy yeast and dark/bready malt flavors; very smooth and dangerously easy to drink for the huge ABV. Very rich with perfectly balanced yeast and malt complexity. Just as great as most classic German versions(though higher on ABV). A highly enjoyable offering, and pristine style example.

Found this beer at Binny's Beverage Depot in Lincoln Park in Chicago.
With a reddish copper to mahogany color, it boasts a light, sweet brandy taste combined with nutty, bready aroma and dried fruits with a slightly dry aftertaste. Nice, rich mouthfeel. Makes a great alternative to brandy!
It's nice to see a microbrewery making a one-of-a-kind style that many breweries have yet to make. This brewery does a great job with this beer style!

A - Rusty, little to no head, no lacing.
S - Raisins, bourbon, prunes, a little bit of chocolate and yeast.
T - Caramel and toasted bread in the front, a little grassiness and hop bitterness in the mid, cedar and medicinal on the finish.
M - A little chewy, heavy, rich, definite alcohol heat.
O - Not a beer I'm going to revisit often, but glad I tried it nonetheless. It feels unbalanced and hastily assembled.
