Vintage 2007
A: Dark murky brown with a tight one finger ivory head. Very, very hazy with a bit of sediment
S: Very sweet. I got an aroma reminiscent of cherry rum cake and some vanilla and molasses. A bit of woodiness in there as well
T: Hugely fruity. Got tons of raisins, plums, banana, all dipped in rum. Lots of vanilla and baking spices like cinnamon and nutmeg
M: Quite thick, smooth, rich and syrupy, with no alcohol kick
Overall this was excellent. One of the best Quads I've ever tried. No doubt about it

2010 vintage from IBS.
A - very dark brown, short lived head
S - treacle, dark stewed fruits.
T - more treacle, caramels, burnt brown sugar, dark dry malts, the bitterness unusual for style.
M - medium carbonated, medium to heavyweight
O - not the best quad, but solid. Dryer than usual.

2010 Vintage
Thanks a bunch to Thijs for this bottle.
Appearance: Pannepeut (as my bottle is labeled), appears a very deep brown in the glass (though not quite as dark as Pannepot), with a back light revealing a slightly hazy, deep red-brown and beautiful golden-amber edges. A medium pour yields a large beige coloured head, that lasts reasonably well and leave some nice patterns of lacing clinging to the glass.
Smell: Mmmm, this smells like another winner from De Struise! Big dark fruity aromas (raisins, figs, plums, cherries and dates), dark bready malts and dark brown sugar dominate the initial nose, with notes of chocolate, toasted malt, spicy Belgian yeast (pepper, clove and earthy nutmeg) and a little banana becoming apparent after a short while. Warming causes the the nose to become a little sweeter, with more of the dark sugary character emerging. Even at room temperature, there is no trace of the 10% present in the nose.
Taste: Initially the flavour seems a little weak compared to the nose, but thankfully after a few minutes it opens up nicely. Again dark fruits (cherries, raisins, figs and plums) dominate the flavour together with dark bready malts. Other notes include: Earthy spices, toasted malt and dark brown sugar. As the beer warms, a light bitterness becomes apparent in the finish and this seems a little out of place.
Mouthfeel: I usually find most Belgian ales to be somewhat overcarbonated for my tastes, but the carbonation here is just about spot on - medium level and fantastically smooth.
The body is medium or just over and in combination with the fantastic carbonation, it results in a dangerously drinkable strong ale!
Overall: Another fantastic quad from De Struise that could easily be mentioned in the same breath as the likes of Westvleteren 12, Rochefort 10 and St. Bernardus ABT 12.

2011 vintage
A - Pours a deep dark brown with a thin mocha cap
S - Vinous berry fruit, grapes, cherries, brown sugar, apple skins, a tiny hint of banana, dates soaked in alcohol, fruit cake,
T - Dark caramelized malts, licorice, berry fruit, tangy grapes, cherry wine, tobacco, very soft acidity comes across. Spicy yeast shows but maintains a certain delicacy. The malts have a charred toffee flavor with a layer of old leather and earthy wood. The spiciness continues through the dry finish. Notes of tobacco are left on the the aftertaste.
M - Low carbonation, medium body, wet middle body while finishing semi dry.
This is the only vintage I've had so I can't compare to a fresh one. The tangyness was more than expected and the fruit almost overshadowed the malts. Light oxidation was and added to the overall flavor. Good layering with a tangy fruit twist.

Doesn't make a big first impression but grows on me. Quite mild compared to some other quads but shows off the stewed dark fruits in the aroma.
Taste has that aspect as well but not as strong as in the aroma. Lesser dark malt character than the color implies too. Mild chocolate gives some sweetness and rounds it out.
Maybe not one of the top beers but seriously well made and easily drinkable.
