We love the piney, fruity flavors of Simcoe hops. This is a classic pale ale, single-hopped and dry-hopped with Simcoe. We cold condition this beer and give it a restrained malt profile, so the hops really pop, like flora in spring. Our friends Patrick, Jason and Brad grow these luscious hops and we hope you enjoy them as much as we do.

Poured on-tap and served in a shaker pint, the beer is a bright, slightly hazed, yellow-copper coloring with a frothy, bright white head. Aromas of light, fruity sweetness with a resiny, bitter hops backbone. Flavors are roasty, with a toasted grain backbone, subtle caramel sweetness, and peppery dry hops. Well balanced and mid-bodied, with a good lacing left behind. Bitter, resniy hops aftertaste with a slightly dry, light finish. Tasty brew.

On draft at The Lark, East Northport, NY and dry hopped at the bar with whole Simcoe hops.
Poured a hazy copper hue with a two finger foamy white head. There was Goid retention and lacing.
The smell featured a light Simcoe spice and a soft caramel sweetness.
The taste consisted of cereal malts, a dull caramel and a secondary drying hop.
The mouthfeel was typical of the style with a residual hop spice.
Overall a tasty well balanced ale. The Simcoe, as potent as it could be, was a bit muted though.

I had a draft of this at the Amsterdam Ale House in Manhattan's upper west side. I liked it a lot and thought it was a great idea to feature simcoe in a non-ipa.
Appearance was a little darker than a typical pale ale. Good carbonation, nice fluffy head which stayed around for a long time.
Aroma definitely had that great catty simcoe essence. Very nice!
Flavor was not as good as the aroma but good nonetheless. Refreshing and a very good flavored American Pale Ale.
Overall good pale ale and a very interesting recipe.

Aroma: Simcoe pine and some pine hops on the nose. Nice woods-like aroma.
Appearance: Clear gold It was kinda dark at the bar.
Taste:Simcoe pine at the front with a wheat and hop bitterness towards the end.
Mouthfeel: light to medium body
Overall: A great tasting beer. As a summer beer i can see this being enjoyed on a nice summer day BBQ some burgers with friends.

Had this on tap at Franklin Park in Crown Heights.
It pours an amber hued gold with a decent off-white head, quite good looking (or maybe it's just this on-and-off grey day in Crown Heights). The nose is nice, clearly a fair amount of Simcoe went into this thing! Taste confirms this, although there a great bread/biscuit backing, though the hops really shine here. This is a very tasty APA, and a wonderful spring beer. My first Peak and I'm kind of into it.

*On tap at The Mews, infamous for dirty tap lines.*
A: Golden amber, thin white head, tiny cracks of lacing.
S: Muted hops, pine and floral. In the background is caramel malt. Nothing that strong.
T: Major grassy notes, faint floral hops. Very dry with some pine qualities. Not too bitter, good malt presence.
M: Thin to medium body, well carbonated, but incredibly dry.
O/D: It's fairly enjoyable, weak hops and an overly dry taste and mouthfeel knocks this beer down several pegs.

Had this on-tap at Hose Company No. 6 in pawtucket,
Came out with a little over a 1 finger head that held on for a good amount of time, lacing alll the way to the last sip. Color was a nice amber color. The smell was pretty pungent, and foreshadowed the the taste well, notes of fruit (citrus and some other fruits that i couldn't quite isolate) and a nice malty finish. The mouthfeel was on point, medium to high carbonation and went down delicious. I would definitely have another if i come across it. Overall a solid, well put together beer, and its organic!

look of hay clear golden. Small head some stickiness of foam. initial fruitiness in the nose... Expands into mango then contracts into mild mineral notes. Malt bitter huskiness. A bit of pepper and grass. Lean malting but powerful protein grit. Something a bit one dimensional about the latitude and malt does not feel as spring as the hopping.

Served from tap into a sampler tumbler. Poured yellow-orange with a half finger off-white head that subsided to a minimal amount slowly. Maintained excellent lacing throughout the glass. The aroma was comprised of pine and pine hop. The flavor was of sweet malt, citrus, and pine hop. It had a light feel on the palate with mild carbonation. Overall I wasn't really impressed by this one. To me it had a very light flavor profile going on here that also wasn't very complex. The pine hops did intensify upon swallowing gradually, but it was a case of too little, too late for my liking. It was just a little too watered down in flavor up-front in my opinion. Unfortunately the aroma was in the same boat as the flavor.

I like the simcoe hop. It's my friend. Peak uses it okay. I like the American pale ale style. I like the ingredients. And I'm drinking this at a Joll Andrews show at the Lovong Room in NYC's LES.
In appearance it's a clear amber with a tiny head that laces but isn't clingy. It smells of the citrusy simcoe hop, and other food stuff- you know - like malts and crap.
An easy going taste that's like - hey- you're attractive- let's go home together- simcoe spring is ready for heat like a college girl is ready for a skimpy top. A little easy kn the mouthfeel, it's very very drinkable.
And organic!

Comes out of the tap a clear orange-amber with a thin white head - this may be an artifact of the pour. Surprisingly hoppy aroma has hints of malt and honey. Hoppy flavor has a slightly sweet malty tone plus woody and fruity hints. Smooth, strongly tingly texture leaves a persistent woody/hoppy fizz.

Had on tap at a local pub, poured into a pint.
A: clear amber color, nice 1/4" head with great retention, gobs of lacing.
S: slight pine and caramel
T: sweet caramel, buiscuit, over taken by distinctive simcoe hop flavor. Outstanding.
M&d: light to medium bodied , light carbonation. Good drinkability, not drying.
Really quite a revelation!!!

On-tap 3/19/2011 at Doherty's East Ave Irish Pub in Pawtucket, RI, served in a US tumbler pint glass.
A: The beer is a light amber color, with a short off-white head that fades slowly and leaves a thick lace on the glass.
S: The aroma contains floral hops, light caramelized malts and a little bit of citrus.
T: The taste starts with a strong hops bitterness and then a mild citrus and caramel sweetness comes in. The malt character is hearty but not too heavy and creates a decent balance. The after-taste is slightly bitter.
M: Crisp and smooth, medium body, medium carbonation, finish is clean.
D: Tasty, goes down easily, not too filling, mild kick, good representation of style, this is a decent beer to drink for a while.

On-tap at the Porter in Atlanta.
Pours a clear copper color with a one-finger slightly off-white head. The head recedes into a wispy layer on top leaving decent lacing.
Smells of somewhat grainy pale malts with mild amounts of deeper caramel malts. Also present are very small amounts of pine hops and diacetyl.
Tastes similar to how it smells. Slightly dry pale and caramel malts - leaning toward the former - kick things off. Joining in shortly thereafter are slight amounts of pine and earthy hops. The pine flavors fade out midway through the sip and hints of buttery diacetyl - significantly milder than any other pale I've had from Peak - carry through to a moderately bitter ending.
Mouthfeel is good. It's got a nice thickness with smooth carbonation.
Drinkability is also OK. I finished my glass without any problems however I'm not sure about another.
Overall I wasn't a huge fan of this beer as the hops weren't nearly as robust as I'd hoped. I was happy to see a cleaner flavor profile in general from Peak though, I'm willing to bet Ringwood wasn't used. This beer isn't worth seeking out but it's not worth totally avoiding either.

A - Pours with two fingers of off-white foam on top of a clear, copper colored body. The head settles at a moderate pace and leaves nice sticky lace on the glass.
S - A nice, strong aroma of citrus and grapefruit hops with a note of orange and a little bit of pine hiding in the background.
T - Sweet, honey and bread malt flavors up front. Some biscuit notes come out in the middle with a hint of toffee and some grapefruit hop flavor. The beer finishes with an increased toffee malt character and strong, pithy bitterness that is accompanies by grapefruit and pine hops.
M - Medium body, moderate carbonation, and a slightly sweet finish.
D - Quite nice, the simcoe character of this beer is readily apparent, especially in the finish. There is plenty of soft, malty character to balance out the hops with just the right level of sweetness in the finish to keep the sharp bitterness from becoming unpalatable. It is a nice touch that they kept the malt relatively light in color and flavor, thereby avoiding any burnt toast or excessive caramel flavors that could obscure the hop character. Very well put together, I would certainly drink this again.

A slight haze in appearance but overall clarity is a brilliant gold color. Pungent smell of fresh citrus, earthy with a well balance of malts Tastes as good as it smells smooth, very fresh bitter hops flavor. Initial taste almost like chewing on a mouth full of hops,must be from the dry hopping..Very crisp light feel with the finish. one word DANK

Had this one on tap at the Local in Saratoga NY
A - 1/2 inch head with good lacing, a clear yellow/orange color
S - piney with a citrus hint on the nose
T - Starts with a bitter bite, and slowly melts into a hint of lemon and orange flavor while retaining its bitterness to the end. Crisp, with a mild malt background, the hops are the upfront flavor in the beer
M - a light mouthfeel, with good carbonation
D - I enjoyed this one a lot, and if I had time would have had another. Very drinkable, crisp and refreshing, and enough bite to keep a hophead happy. I hope to have another soon to confirm my thoughts on the first try of this beer.

Bottle poured into glass gives a moderate sized head that is beige in color. The head looks fizzy at first, but gets more creamy looking as rocky as it settles down. Beer is golden/copper in color. Leaves moderate lacing with good retention. Aroma is mostly floral hops and caramel malt, also having citrusy hops and biscuits.
This one has a great taste for a pale ale. Very hop forward (less malty than the smell would suggest), starts with piney hops, then grapefruit, orange, and a touch of lemon. Just the right amount of light caramel malts. Has a floral, bready, and a touch piney finish. Has medium body with high carbonation and a bit of creaminess. Crisp and clean finish. This is one of the more flavorful APAs that I have had.

12 oz bottle poured into a Peak Organic glass.
A - Great look on this. Clear and bright copper body. Good head and retention.
N - Not as hoppy as I would expect. Very muted. Toasty notes.
T - Same muted character as the nose. Toasty. Lightly hoppy with a little citrus and pine. Almost like a British IPA but with American hops.
M - really good feel. Effervescent and crisp.
O - a solid drinker. I might not buy too many of these but I would be more than happy to drink a few on the boat or on the backyard.

To me, this is what a sessionable IPA should be like. A nice solid hop aroma and flavor. Nothing fancy going on, but a nice beer to drink. This is the first beer from Peak Organic I have really enjoyed.
Not much lacing in the glass. Light body and mouth feel, but the flavor is full.

Pours a clear goldish amber color, half finger of white head.
Smell is pine, citrus in the way of orange and manderin oranges, no malt to be found in the nose.
taste mirrors the nose almost identicaly, pine, manderin oranges, bittering grapefruit in the end.... The malt is there but you really have to go searching for it.
Mouthfeel is medium light, with crisp carbonation, what you would expect from a APA.
Really good spring ale here... I love pales and this is a good use of Simcoe hops that is for sure, really shows the piney/orange flavor of the hops, do not hesistate to grab a couple.

Ug, minus points for screw top!!! At least it has the date though, best by Aug, 2013.
Pours a nice looking fizzy frothy almost 1 finger head that sticks around for a while, eventually leaving some lacing as it slowly fades, mostly clear tangerine reddish-orange colored beer.
Nose is mixed, it has some great hop aromas although much much lighter than they should be, hint of tropical fruit but barely there, more I get that similar peak organic malt and yeast base profile that seems to come in many of their beers, a biscuity cracker and little caramel malt, light floral slightly fruity yeast addition, the tropical fruit is so light I really have to look for it and take huge sniffs.
Taste starts again with the Peak Organic base, biscuity cracker caramel malts with some sweetness and mild floral fruity yeast additions. Hops at least come out a bit more this time, a nice spicy bitterness followed by a fruity floral hop character, grassy and more noble like than I expected, very little simcoe character, almost as if they forgot to add 75% of the simcoe or they used a two year old batch. It does bring the slightest tropical fruit character but again I really have to look for it. Finish is drier, with plenty of bitterness at least, spicy and grassy kinda bitterness though, wiht a bit of a sticky resin sticking to the mouth from the malts (not hop resins), and a bit more biscuity caramel malt flavor.
Mouth is med to a bit lighter bodied, lots of fluffy carbonation maybe too much actually.
Overall fairly lackluster, just a light APA that gets some decent hop flavors, but noble hops very very little Simcoe which is very disappointing, and the malt profile comes through a bit too much with the cracker and caramel to really present what would be a nice Simcoe beer anyways.

A: Pours out a very clear dark amber color. A bountiful 3 fingers of almost white head. Nice retention and rings of lacing.
S: Bursting with the smell of dank pine, grapefruit, and tropical fruit. All of which were pretty equally present.
T: A milder version of the smell with a biscuity malt backbone. Some lemony flavor in there too.
M: Medium body that is a little oily with medium carbonation. Crisp and goes down easy.
O: Very good. Better than I had anticipated for one of the "more commercial" craft breweries. It's a real good pale ale in my opinion. It balances out good aroma and taste while keeping a very good hop presence that isn't overbearing for a pale.

Best Enjoyed Before August 2013
A: Pours a chill-hazed golden orange color with 2 fingers of head that quickly fizzles to a thin cap
S: Fruity hops with a candy-like malt sweetness outline the aroma
T: Follows the nose. Floral and fruity hops are nicely balanced by the slightly bready malts. Lightly sweet and almost tea like
M: Light-medium bodied with moderate-high carbonation
O: A nice, refreshing spring brew. Simple, easy to drink, and organic to boot. Worth it if you want something easy to session
