Bottle thanks to hoppypocket, poured into a HF stem.
Pour: Hazy orange with two and a half fingers of off white foamy head. Head hangs around and leaves very clumpy lacing. Nice.
Smell: A funky tartness up front. A definitely lemon presence, along with some green apples and pear. Lots of Brett on the back. This smells more like a sour and I like it!
Taste: Lemon tartness, and nice funk up front, followed by a distinct oaky vanilla. Follows through with some more sour funkyness and tart pears. Finishes quite dry.
Mouthfeel: Really nice tartness, but juicy at the same time. Good.
Overall: Honestly more of a mild sour than a saison, and I love it! Really nice beer.

Pours clear gold. Thick white head and whispy lacings to the finish.
Tart nose, cutting lemon, dank barnyard hay.
True to the nose, very tart, thought the sourness is a bit restrained. Crisp acidity. Apples and lemon throughout. Clean finish.
Lively carbonation, and very easy drinking for the strength.
A touch too tart for my tastes, but a fine creation.

A: Brilliant clarity, deep golden apricot in color with a tenacious ring of foam. Carbonation lasts a while.
S: Very complex aroma lead by sweet vinous barrel notes, damp basement brettanomyces funk, tannic oak. Juicy, fruity, complex, very inviting.
T: A pear fruitiness that I think is coming from the barrel and the brett dominates for me, peppery yeast character, a bit of acidity on the finish and some 'tangy' oak.
M: Could have used more carbonation for me, but its dry and very drinkable.
A very delicious saison that features a ton of interesting complexity from the barrel. The other barrel aged brett beer I've had from Trou du Diable (Bateuse) became overly brett-y / mushroomy to me after 2 years in the bottle so I will be watching this carefully.

750ml bottle. One rather complex description on the label, en francais, of the aspects of this offering, just below a rather sexy depiction of the titular creature, an apparently 'sweet' version of the mythical Succubus - trick of the devil, indeed. And at 23 bucks a pop, I feel like she's already done her job.
This beer pours a chill-hazed, but mostly clear, tarnished golden colour, with two thick fingers of densely puffy off-white head, which leaves a broad array of skewed chain-link lace around the glass as it genially recedes.
It smells of understated earthy funk, acidic apple and white grapes, soft grainy wood notes, musty wild yeast, honeyed tropical fruit, sharp lemon rind, and somewhat zingy citrus and pine hops - more Yankee wild ale than anything else. The taste is semi-sweet pale grainy malt, a restrained funky yeastiness, apple cider, a slightly acerbic barrel woodiness, tame orchard fruit, more pedestrian, everyman citrus hops, and a pushy earthy dryness.
The carbonation is steady, and agreeably plain enough in its bearing, the body a sturdy medium weight, and generally quite smooth. It finishes mostly dry, the grainy maltiness maintaining its innocuousness, as the funk, yeast, fruit, and hops do well to intermingle and still impress through the end.
A lot going on for a saison, which seems to be the focal point for many breweries of late, i.e. subverting a normally subtle style that, maybe, just maybe, can't handle it. Here, the barrel treatment actually does no great disservice, instead providing mild wood and fruity essences above and beyond the base beer, such that one is left with a sense of bolstered weight, that while bearable enough, also seems somewhat out of place. To no-one's surprise, complexity can at times breed confusion.

750ml bottle poured into tulip 18/3/13
A clear golden yellow with tiny bubbles popping up everywhere, two fingers of bone white head quickly falls to a thick film that leaves a couple partial rings followed by some random patches
S Where to start? the funk's there, lots of vinous notes both sweet and dry white if that makes any sense at all. The oaks strong, I get some of the floral honey and vanilla I read on the bottle but not the apricot, apple and pear instead, some spice and very faint bubblegum, smells amazing
T more barrel then the nose and some citrus and faint pine I didn't smell, the hops haven't faded all that much but I wasn't really picking the hops up on the nose. The smell was hard act to follow but I'm grooving on the flavors as well, tasty stuff
M medium bodied with the tiny bubbles working well but stopping short of creamy, a little earthy rind on the finish
O I've little to complain about and much to praise, its a sexy beer start to finish with the barrel working wonders for it
Very interesting brew going on here, quite complex and I could see this being a completely different beer in a year, I'm guessing this one would evolve for some time and I'm going to find out even if it costs an arm and a leg

Thanks to papat444 for sending me a bottle of this. Dated March, 2012. Served in a plastic cup during the Ale Obsession script read-through.
A - Off-white foam settles to a thick cap and splotches of lace. Hazy apricot body. Looks like a Saison.
S - Dusty, leathery brettanomyces character, with some mild pineapple as well. A hefty dose of white pine, with some tropical notes coming through there as well, as well as a touch of oak. Stone fruit malt base from the Saison, and a faint rubber/plastic note I occasionally get from dirtier brett strains. On the whole quite good, though.
T - The taste is more earthy and phenolic, with more of the base beer's yeast character mixing with the musty brett flavors. Less malt sweetness and vinous character, although there's a dry Sauvignon Blanc vinous oak flavor in the finish. Definitely more brux than clausenii in comparison to the aroma.
M - Medium-bodied, with pleasant soft carbonation, a touch of alcohol warmth, and a dry, mildly tannic finish.
D - This is a very nice wine-barrel Saison, and we easily put down the 750ml bottle at the party with some people actually missing out. If it's not obscenely expensive I'll happily buy another bottle, seeing as this is now available in Chicago.

Huge thanks to ygtbsm94 for sharing this at a recent tasting. Served in a mini snifter. Pours a nice yellow color with a good white head. The nose carries nice Brett notes with a bit of earth underneath some hay, stone fruits, light wine, and pineapple. Some lemon comes in through the flavor. Light body and dry finish. Very nicely done beer.

I love this brewery, total fan-boy. Thank you to unibroue4ever and hoppypocket for both getting me a bottle of this.
Appearance. Pours a hazy honey-amber with 2.5 fingers of thick, cream-coloured head that leaves some great lacing.
Smell. Bright lemons, a little sweet pineapple, pear, and spice with maybe a bit of wheat along with some barrel and nice bretty funk.
Taste. Lots of sweaty brett funk, some light tangy fruits, some lightly bitter woody funky flavours that last a while. Nice.
Mouthfeel. Medium body, medium+ fine and lively carbionation.
Overall. A great take on a saison. Enjoyed it!
