8.5 oz bottle into my Duvel tulip

A: Poured a half finger cappuccino colored head. Color is a midnight black, no light can penetrate. Carbonation appears to be extremely fine with some yeast floaties visible at the very bottom of the glass. 15 minutes after the pour, no lacing can be seen on the glass.

S: The nose is rather subdued. Plum and raisons , vanilla, cream, and coffee. As the beer warms, a honeydew sweetness really shines through.

T: Exceptional. The taste begins slow like the nose, but then progresses toward an explosion of flavor mid palate. The cognac integrates well with the chocolate, grape, toasted malt, and coffee flavors. The beer leaves your plate with tastes of smoked wood, bakers chocolate and Madagascar vanilla.

The cognac aging has really added some nice nuances to this beer. I interpret it as a kind of spiciness that surrounds the main flavors and enhances them. I've had very few beers that provide such a noticeable transition of flavors. The ABV is extremely well hidden. You have been warned.

M: Fragile and silky smooth. Slightly astringent, finishes more on the wet side. The ABV provides an undercurrent of warmth on this cold December day.

O: I was extremely pleased with this beer. It was so smooth and seductive. She caught my eye and never let me go. Another great beer from Mikkeller.

A - Dark, almost black, brown with not much of a head but more chocolate milk bubbles that sit on the sides of the glass. The beer seems on the thinner side.

S - Chocolate, light coffee, caramel, some Cognac sweetness and oak. Big fudge notes near the end that combine with a slight oak presence from the barrel

T - Booziness and alcohol hit up front with anise and dark coffee. As it goes on, the coffee continues to become stronger. Near the finish the booze and oak come through. The booze is really strong and gives the beer a strong kick. There is not much cognac barrel flavor that you get as much as a strong, astringent alcohol presence. Finish is lots of roasted bitter coffee, prunes, and fudge

M - Medium body that is a bit on the thinner side. Lots of alcohol and bite from the booziness in it that makes the finish really astringent.

O - Overall, this is really a disappointment. The base beer can't keep up with the barrel and the booze really takes over. It just doesn't have the nice cognac barrel presence I like in Cognac-aged beers but instead it just tastes like the beer picked up cheap, alcohol laden booze to it. It does have a lot of roasted coffee, fudge and dark fruits flavors. Overall, I prefer this without the cognac as it seems to throw off the regular weasel.

A: Pours like a stout, dark as night. Can't see through it. Initially a thin layer of light tan head, that forms a collar. Sticky lacing bits.

S: Booze. Barrel. Dark chocolate. Stale roast. Malts.

T: Up front I get booze. That cognac sweetness hits first. Then you get into the stout. Dark chocolate. Roasted malts. Mid palate malts really define the beer. Finish is big; lingering dark cocoa and roasted espresso.

M: Thick full bodied.

Picked this up a long time ago...I think at Hill Farmstead. I know I got the Calvados bottle there..Poured into my duvel tulip.

A - Pours a deep dark clear brown that when its all settled forms a nice black hue with a very nice half a finger of dark, dark chocolate hued head that leaves nice legs.

S - Aromas...ah..maybe I should have held on to this one longer as its awfully boozy on the nose. Behind the cognac are some nice roasted malts and chocolate. For the most part though its all cognac.

T - Taste, taste is wonderful. Dark chocolate then overpowered by creamy melted milk chocolate. Faint malts, nice sweetness, then the cognac and barrel comes in. Barrel is soft and subtle and the cognac is there, albeit on the stronger side, however it never really overpowers the delicious melted milk chocolate.

M - Mouthfeel is quite nice, even if it is a bit strong. Creamy, silky..quite velvety and nice.

O - Overall, this is a damn fine stout. The cognac, unfortunately, was still a bit too potent. Wish I had waited another year before cracking it. Delicious.

Appearance: Black as night and completely opaque in appearance. The brown, frothy head can be coaxed out of the bottle with a proper pour.

Aroma: The aromas of cocoa nibs enrich the roasted malts which are not burnt, but strong and prominent. A slight alcohol presence that's not hot but warm and inviting. There is a definite presence of cognac.

Taste: Roasted malt and chocolate are the first I notice. The chocolate is rich like dark chocolate, but smooth like milk chocolate. The sweetness of this beer, thanks to generous cognac editions, reminds me of chocolate oranges. The beer progresses into toffee, caramel and cream; and then lingers. It becomes very dry and the smooth roasted malt reappears in a slight bitter finish. You can notice the Cognac providing a warm burn on the back of the throat and light oxidation notes that are quite sherry-like.

Mouthfeel: Full and chewy. Medium-low carbonation really helps accentuates flavors. There is a slickness that coats the mouth.

Overall: This beer has a beautiful, brown head and smells delicious. The flavors blend really well and are smooth and inviting. The cognac really adds a nice level of complexity as it accentuates and changes flavors and perceptions. I get a nice sweet,crisp, orange-fruit flavor that resonates well with the chocolate and smooths the roast. Age has been good to this bottle.
The carbonation is just right as well. The FULL and CHEWY body is brought to life with bubbles of carbon dioxide and the flavors really just burst forth and take over the palate. Drinkability is an issue with this as the palate is filled, dried out and slickened by a film of this fabulous beer. After 8.5 oz, I am teased and tempted, but never satiated. At least the drinkability issue is moot. Great beer!

Bottle pour at the bottle share held at Chloe's inside Golden Road Brewing in Los Angeles, CA.

Pours an opaque black with a foamy khaki head that fades to nothing. Tiny dots of lace form around the glass on the drink down. Smell is of dark roasted malt, cocoa, fruits, and cognac. Taste is much the same with a cocoa flavor on the finish. There is a slightly alcohol kick after each sip. This beer has a lower level of carbonation with a slightly crisp and medium bodied mouthfeel. Overall, this is a pretty good beer but the cognac presence is fairly mild in this one.
