Dave offered up Aroma Thyme Bistro when I put the lean on him for some places where I could get a good beer in the Hudson Valley. Ellenville's a little ways off, up or down 209, depending on which way you're coming from. Still, located nearly halfway between the two places I work, it was going to be just a matter of thyme before I got out that way...
A 12 seat slight arc wood bar runs the length to the left, and behind it, a panelled mirrored bar back unit with shelving over the mirrors to each side holding booze and glassware, and the bottled beer selection displayed above. Hardwood floors, red pressed tin ceiling, arch windows cut into the wood slat front, diamond patterned pale green wallpaper and wood slat walls with a lime green trim. Ceiling fans, drop lighting over the bar & seating areas, candles on the bar, potted plants in the front window and on the bar, A TV over the beer cooler in the corner, great "Art of Nature" framed prints for sale (massive Statue of Liberty, Elvis, Einstein and other "mower cuttings" carved into cornfields), new retro signage, and large Amethyst pieces (purpley crystal chunks of transparent Quartz) displayed behind the bar at both ends. 3 elevated booths, 7 tables, and a bar counter for 2 in one of the front windows. There's a small separate dining area to the rear with a good view of their massive wine rack.
The menu, a meeting of gourmet and holistic cuisine, is very vegetarian friendly, and is geared towards healthy eating. Grass fed beef with no hormones or antibotics, free range chickens fed a pesticide free vegetrian diet, foods low in cholesterol and essence oils used in preperation and cooking. Owner/Chef Marcus explained that he tries to avoid using butter, heavy dairy, refined sugar and white flours in the preperation of his foods. He uses organic grains and legumes, and local produce. I had the pan seared Gulf Shrimp glazed with Chipotles, Pineapple & Molasses. I was concerned about the heat but went with it anyway, and it was just awesome. Marcus later commented, "The Molasses really carries the Chipotles", and right he was. Followed it up with a Blueberry crisp with Vanilla ice cream. Also, just perfect.
An extensive wine list, some good Single Malts and Tequilla's, 3 taps (Brooklyn Brown Ale, Ommegang Hennepin & Wit), and 2 dozen plus bottles. Good local and regional micros (3 offerings from Ommegang, Heavyweight Lunacy, Victory Hop Devil, Wolavers *Organic* IPA, Otter Creek Lager, Allagash Triple Reserve, Southern Tier Porter), micros afar (5 offerings from Rogue, Mendecino Red Tail Ale, Flying Dog Horny Dog Barleywine), and imports (Samuel Smith Oatmeal Stout, Corsendonk Brown Ale, Paulaner Hefe, Weihenstephaner Hefe Dark, Dinkel Acker), and a cider and N/A. It's a good beer list, small, but tight. Got a great meal, good conversation, and the service was excellent (Did I mention that Cassondra likes Barleywines?).
Trust me. If you get suckered into a family trip to the Nevele Grande, feign illness and sneak away here for dinner and drinks.

After several trips here the food & beer selection continues to amaze me. We just went to their Oskar Blues pairing last Friday. The Food along with the beer was the BEST meal I have ever had at a Restaurant. The Beer was great as well, as I am a longtime fan of O.B., but the pairing Jamie, Marcus & Kevin put together was over the top impressive. They started the meal with a sushi appetizer, second was a potato/quinoa cake, then an amazing trout, then a unbelievable roasted lamb, finished with their signature chocolate. WOW. It IS worth the drive.

A huge My Bad for not reviewing Aroma Thyme Bistro before this. Hard to believe I told Steve about this place almost 4 years ago, but after reading his ( yet again) great review I realized it needed an update.
Tucked in off the main road ( rt 209 / Main St ) in the sleepy town of Ellenville, Aroma Thyme is a gem that would seem better suited to Park Slope Brooklyn or Greenwich Village. Country chic decor with changing displays of local artisans the warm wood and friendly greeting is more than simply welcoming.
A fully stocked bar with a unique selection of tequila's, vodka's, rums etc as well as an extensive wine list that includes some super pricey stuff is overshadowed by the ever growing beer list. Tap selection is limited but always has some solid" local" offerings from Brooklyn, Ommegang or Keegan Ales but the bottle list is probably second only to The Country Inn 20 miles north - impressive in itself that 2 such amazing selections are so close in this low traffic area of NY.
Too numerous to list, the bottles range from Carona to Rochefort with some of the finest examples of styles available. Just about every style of beer is represented and selected with thought and care. Even more impressive is the ever growing list of vintage and cellerable strong ales like Brookly BCS, Rogue RIS, Westmalle Tripel and a host of Barleywines from various years.
The food has earned them a high Zagat rating and well deserved. Chef Marcus uses as much fresh local and organic ingredients as possible and spares no expense to bring in exotic game and seafood for his constantly changing menu.
Exceptional quality in both food and drink. If you find yourself in Ellenville or climbing the Rocks at Minnewaska / Mohonk I highly recommend this jewel of a spot - cant imagine anyone being disappointed.
