341ml bottle, a dreamcatcher-adorned bear gracing the label.

This beer pours a clear, bright medium ruddy amber hue, with one fat finger of tight pale beige head, which leaves some randomly shaped lace tropes (webbed, striated, etc.) around the glass in its wake. It smells of sweet caramel biscuit malt, orange cream, and bitter earthy hops. The taste is sweet doughy, bready malt, an even citrus fruitiness, a bit of mineral/stone character, and a lively, earthy hop bitterness. The carbonation is average, the body medium weight, and smooth with a tangy sidebar. It finishes off-dry, the biscuity malt, and significantly bitter hops doing well to tantalize your palate to the end.

A decent new world melding of Yankee red ale and German altbier. I raise this glass to my 11 cents' worth of contribution to the recovery of Quebec ursine species.

12oz bottle at The Only cafe. Pours a nice ruby caramel color, hints of rusty orange. Thin head, pretty good retention, leaves some creamy lacing.

Nose is full of toffee, light copper metallic notes, toast. Taste reveals a nice initially toffee sweet base, dark fruits, toast, coppery mineral notes under par for style, and then a bracing (for the style) grassy and lightly spicy piney hop bite. Very dry finish, body thins out and disappears in favor of the hop bite. Very 'American' take on the style. Slightly thin, low carbonation.

A pretty easy drinking beer that pleases overall. Not particularly true to style which is not necessarily bad but it stil has a few overall flaws, balance issues.

A: Deep copper with dark cream head, some retention & lace.

S: Earthy, caramel, floral, toffee, hint of sulfur,

T: Earthy mineral, caramel, grass & citrus rind, more resiny hop oil than you'd expect from the style, light sweetness is overtaken by a serious bitterness.

M: Fairly full body for its strength, light residual sweetness, hint of hop acidity.

DO: A good drinker and overall decent brew. I like it, but it's sort of a bigger/american interpretation of the style.

From a 341 ml brown bottle. Pours out a hazed deep amber, bright reddish-copper in light, massive rocky off-white head with large loose bubbles. Solid retention with lots of patchy lacing.

Sweet sugary caramel malt on the nose, some earthy rye, dark fruits.

Flavour would be cloying if it didn't turn savoury just as quickly. A sweet fig-like dark malt up front, similar to a Scotch Ale. It then becomes dry and earthy, along with an addition of spicy, herbal, leafy hops, finishing with a rye-like dryness and spicy hops.

Medium-light mouthfeel yet fuller creamy texture to offset that, low carbonation.

Not fully on par with a typical Alt, but a very fine beer of its own accord and well crafted. Worth checking out at least once.

Appearance - Hazy reddish brown colour with a large size frothy and fizzy beige coloured head. There is a low amount of carbonation showing and there is some really good lacing. The head lasted for around 5 minutes before it was gone.

Smell - Malts, breads/grains, an earthiness, rye, dark fruits

Taste & Mouth - There is an average amount of carbonation and the most noticeable flavours are malts, caramel, rye, and a smokiness. Also detectable are some dark fruit flavours.. perhaps grapes/raisins and a little bit of hay/straw as well. It finishes with a malty and smokey aftertaste with a lingering peppery/hoppy aftertaste.

Overall - Lots of different tastes going on with this beer.. It is quite complex yet very easy to drink. I am rarely disappointed with Dieu Du Ciel and I'd drink this beer again for sure.

A - Pours a nice amber colour, finger of beige head with solid retention and some nice sheeting lacing.

S - Some rye notes, followed by some caramel and toffee malts. A light peppery scent with some nice leafy green hops on the finish.

T - Much different than the nose implies, with chocolate and espresso flavours shining through and some bitter leafy green hops that follow. The bready caramel malts lingers alongside some the ground coffee flavours on the palette.

M - A medium bodied ale that goes down smooth and finishes with a touch of dryness.

O - I'm really digging the altbier style, as they seem to possess very bold flavours, yet they are easily drinkable. Highly recommended ale and definitely worth grabbing a bottle if you can.

Bottle date of Feb 2011.

Pours a mahogany color with a finger of off white head. Head has staying power. Plenty of lacing left down the glass.

Nose is earthy with some caramel malt.

Very malty.and earthy. A bit of sweetness contrasted against a grapefruit bitterness. A small bit of toastiness. Mouthfeel was a bit chewy, with a certain amount of thick feeling left in the cheeks after the swallow.

I wouldn't characterize this as "delicate", but overall this was fairly enjoyable. I would probably drink it more as a meal accompaniment instead of a session beer.

A - a clear rich maple brown, generous off white head retained extremely well with consistent lacing
S - nutty, sweet, musty, and some light fruity syrup, and a subtle hop note on the back end
T - malt heavy mix of nutty, molasses, and an earthy/woody flavour, grassy hop balance, and light cherries
M - medium carbonation but fully smooth, pleasant hop bitter finish with a light coating lingering on the back of the tongue
D - DDC never fails to put out unique and tasty beers, this is very smooth and balanced, a warm and cozy drink

A: Dark copper body with one finger of light mocha head leaving quite a bit of lacing.

S: Nice collection of dark fruits, figs and some roasted malts.

T: Quite malty and nutty, finishing with a nice touch of pine hops.

M: Medium-light bodied with medium-low carbonation. Texture is full and leaves a bitter-hop finish.

D: Another pleasing beer by DDC. From what I read from papat, I am glad that this replaced Fum...

First review since the ''overall'' change. This beer replaces Fumisterie (in bottles).

Had this with my supper, take-out pizza with loads of bacon, steak and other meat.

Poured from a 341ml. bottle. bottled Feb. 2011.

Appearance: A reddish-amber, maybe red body with a pockmarked head. 3 fingers worth that stick around a bit though not quite long enough. Fluffy foam clings to the side.

Smell: Caramel malt, earthy with some grapefruit and nuts.

Taste: Starts out very malt heavy with some nuts. A musty earthiness is present with some spices. As it warms, it almost transforms into an IPA hybrid as the bitterness that was in the finish before comes out strong. Good dose of grapefruit hops though never overdone.

Mouthfeel: Low carbonation with a nice full body. Despite the bitterness, it keeps it's place and is never abrasive.

Overall: Really easy to drink if you don't mind a bit of an edge. Let this warm up as more layers of flavor become apparent.

341ml bottle poured into pint glass mar7 2011

A clear reddish copper with lots of tiny bubbles that get larger as they float up to a nice two fingers worth of tan head that leave several rings of lace

S fruity, earthy and a little brown sugar perhaps the brown sugars a little burnt

T what I smell and some hops come out a little more, faint pine and something I just can't place, even with hops trying to balance things out its still quite malty

M well carbonated, full for the color and quite bitter, it leaves a little bit behind on your gums and I'll be able to taste it tomorrow the flavors stick to your mouth

D overall I enjoyed this beer a fair bit, I saw the bottom of my glass before I knew it, not something I'm used too but I could see myself getting acquainted

I'm happy I have a 6er of this one perhaps after another 5 I'll have figured this one out a bit better. Now that I think about it perhaps I should review one of the bottles a little deeper in the box but what can you do

A good finger of cream-white head fades to a patchy cover and ring around the glass. Clear dark-copper coloured body with ruby highlights. Decent lacing. Great colour.

Lots of malt, caramel, minerals, little roasty, earthy hops. Nice full nose.

Lots of malt; though it's dark and earthy, not sweet as are most malty beers. Lots of hops as well, also extremely earthy (including a little spruce). No citrus here, other than a little darkly-bitter grapefruit pith on the finish. Bitterness is fairly high, though it's mostly met by the malt. I'd say this is nicely balanced. A bit reminiscent of something Les Trois Mousquetaires might do but definitely less intense than any of their offerings. I'd almost say it's on the watery side but I'm enjoying it.

Drinkability is kept high with a lighter body, though I'd trade off some of that same drinkability for something a bit more full. Moderate carbonation.

At 5% ABV I would enjoy drinking a few of these. Nice to see a solid example of a German style from DDC, and a drinkable one at that.

Pours an amber-brown colour with a finger of white head. Some lacing down the glass, ok head retention. Smells of floral hops with toasted malt and caramel. Fairly sweet flavour for the style, mild bitterness does come through though. A little bit thin body, but smooth enough mouthfeel. Another nice beer from Dieu Du Ciel, but not one of my favourites from them.

Bottle: Poured a clear dark brown color alt with a nice large frothy head with good retention and some retention. Aroma of biscuit malt is well balance with light residual sugar. Taste is also a well balance mix with some biscuit malt with great notes of caramelized malt with light residual sugar notes and light bready yeast notes. Body is quite full with a very solid malt backbone and good carbonation. Very well brewed for style and something I will have more then once.

A decent beer, but not so alty. Pours a bit dark looking with three-quarters of an inch foamy head. Malty aromas which is the taste, it is a smooth drinker. A tad thin mouthfeel. On the sweet side, some bitterness and black pepper in the finish.

I'm trying to review more often. Past few years I just haven't had the time to do so and I just couldn't be bothered to be truthful. This one is worth a few notes.

Firstly, it was added in the wrong place as this is an offering from the microbrewery and not the brewpub. The brewpub's offering in the Altbier style is called Grand'Messe and is very enjoyable.

Appearance points are high because I can't find anything really wrong with this. The pour is inviting, the beer is a warm and crystal clear mahogany with some russet reflections near the stem of my tasting glass. The head is very tenacious and leaves thick clumps of tan lacing on the sides of the glass.

I pull the glass to my nose and a generous whiff of a favourite of mine emerges... brewday. Gentle malts and bready notes emanate from the foam with just a hint of hops to disturb the baked goods signature. No real fruitiness detected but the malts suffice to make me want to quaff this.

My first sip tells me this beer is perfectly balanced between the bready, biscuity malts and a firm balancing bitterness. Very minor mineral notes support the clean malt and hops and make this a very satisfying brew. Mouthfeel is firm and clean, allowing the malts full expression. The aftertaste is appropriately short ending on sourdough bread notes... nothing more to say except that this is as good as it gets.

This a highly quaffable beer that would work in all seasons. Equally at home on those fresh summer nights or as an aperitif on a cold winter day. I don't think there's a time I wouldn't enjoy this beer. It combines a full flavour profile with just the right volume to be drunk in quantity. Great session ale. Dieu du Ciel does it again... and again...

A: Dark copper color, fully translucent. Nice off white head, very good retention and correct lacing.

S: Very mineral smell. Some caramel malts. Maple syrup, brown sugar mainly. Some light earthy hops. Smells good but the smell is pretty light.

T: Much more hoppy than what I expected. Earthy and grassy hops are very present. Lots of baked and caramel malts. Toasted multi grain bread is VERY strong in this too. Some light caramel, maple syrup and vanilla. Strong and nice taste.

M: Nice medium body with medium carbonation. Very dry yet still sweet, this is nice.

D: This is a nice beer that is well balanced between the malts and hops. Super easy to drink.

Really German in the feel, smell and taste.
