A - Pours a hazy burnt orange colour with a brown hue, finger of head with decent retention and some sporadic lacing.

S - Sweet citrus notes, lemon iced tea, bubble gum and cloves with some honey and cane sugar on the finish.

T - The citrus hops come through nicely, reminiscent of a DIPA, but the fruity Belgian notes coming through with hints of clove and toffee. A touch of ABV sweetness with a bitter citrus flavour that lingers.

M - Medium bodied, smooth with a touch of dryness and a hint of ABV heat.

O - This stuff is potent, yet smooth and creamy. Loads of flavour and surprisingly drinkable. I would love to see this available through the LCBO in their signature 4-packs as this is something I would treat myself to frequently. Any fan of the style may be a bit confused with the citrus hop kick but will surely not be disappointed.

A: Crystal clear copper/pumpkin orange with 1 finger of creamy thick head. nice sheeting of lace across the entire tulip glass.

S: Giant grapefruit scent with sweet cream, pine and hints of yeast and sweet malt. Smells like a creamy grapefruit trifle.

T: Sweet and creamy malts with notes of dry grapefruit rind. Sweet biscuits and and creamy mild toffee. Finishes with pleasant bitter Citra hops. The taste is creamy and smooth as if it might have been aged in oak barrels.

M: Syrupy and coating in the mouth, great creamy feel with some pricks of carbonation at the front end. Mild alcohol finish to compliment the dry hops.

O: Herbe a Detourne is a contradiction of taste and smells, sweet creamy malts and dry bitter hops that compliment each other perfectly. The sweetness of the triple is present and is accented with the addition of bitter Citra hops. Complex and refined, worth trying as a sipping brew with great cheese and dried fruits.

A - dark straw yellow. Darker than your average tripel. 1" head which dissipates quickly

S - Citra! Holy cow. Grapefruit explosion. A little sugar, maybe some bubblegum, Mountain Dew, a little uric acid.

T - Alot of citra in there. Grapefruit, passionfruit. A little pine. Boozy finish. Definitely taste the ABV

M - Very nice. Medium body, medium carbonation

O - More so a Belgian IPA rather than a tripel. Not a terribly huge fan. Good, but would like more malt, less hops.

A - hazy dark golden, solid creamy head, left plenty of lacing as is slowly receded
S - spicy yeast, floral, citrus, and grassy with a mild earthiness, all bright aromas
T - much like the nose with stronger citrus and floral notes, finishes with a sweet and spicy kick, hop dominant for sure
M - light strongly carbonated body, finishes dry and acidic
O - this should be listed as a Belgian IPA as it is hopped up on hops, a fine example of what I love about DDC!

The beer is golden in color with some orange notes. Veiled. Nice white foamy head on top of it. Dense and sticky. Very nice looking beer, almost perfect if not perfect.

The aroma is citrusy and fruity. Complex. It has some tripel aspect but the Citra hops is something totally unexpected. In the mouth, it is a tripel, very fruity with a bitter finish. Full bodied. Quite dense in the mouth. Effervescent. Refreshing and tasty. Dangerous with that high alcohol that is well hidden. Wow another big hit by DDC.

Pours a light copper with decent head and lacing.

The aroma is full of citra hops, yeast, a hint of spices, and comes across very fragrant.

The taste is potent, yet refreshing as well. A good accomplishment for a beer over 10%. The citra hops really bring new balance to the tripel, yet they're subtle enough to let the tripel shine. I feel like this is like a bigger brother to Derniere Volonte, but a bit bolder and more refined.

The body is medium in terms of fullness and medium/light in terms of weight. The finish is moderately dry and slightly sticky.

Overall, this was a solid beer, and dare I say, one of the most refined brews I've seen from DDC. The alcohol is nearly invisible, and every aspect of this beer can shine without dominating anything else. This was a top notch brew. Highly recommended.

341ml bottle. "A diversion via the herb" - so I can only expect and heavily anticipate.

This beer pours a somewhat hazy medium golden hue, with two fingers of puffy, foamy white head, which leaves some broken honeycomb lace around the glass as it steadily abates.

It smells of strong citrus hops, lesser, but still hefty pine oil, a bit of earthy yeast, savoury spices - clove and nutmeg, primarily, with a sugary pale malt backbone, adrift in a pool of alcohol serenity. The taste is more zingy orange/pineapple/kiwi citrus goodness, a continuing moderate spiciness, some persistent grainy pale malt, and a nice simmering booziness.

The carbonation is a bit prickly, but hardly distracting in this mealy morass, the body a sturdy medium weight, a bit airy from the lingering bubbles and hovering alcohol, which casts a dull shadow over any claims to outright smoothness. It finishes sweet from the antagonized malt, warm, and still agreeably hoppy from the workaholic guest star.

Hmmm, take a Belgian standard, and hop it to the nuts with a sexy New World varietal? The result: damned fine, I must say, but, riddle me this - why is this not a Belgian IPA?

Appearance - Pours a hazy pale amber yellow with a finger width of bubbly white head.

Smell - Tangerine/orange, yeast, cloves/spices, other citrus fruits.

Taste - Earthy hops along with tangerine and citrus flavours. A touch of the yeast and spice flavour in the middle - spices leave a little tingle behind. ABV is well hidden. Pleasant bitterness in the finish.

Mouthfeel - Medium bodied with light carbonation. Nice tingly bubbles.

Overall - An excellent tripel by Dieu du Ciel. The ABV is well masked, making this a true representation of the style. Nice touch with the tangerine. Well balanced in hops and malts.

Poured from a 341ml. bottle, bottled 04/12.

Appearance: A gold-orange body, very hazy with 2-3 fingers of head that recedes gently and drapes itself around the glass.

Smell: Strong tangerines, citra aroma is powerful. Spicy lemon, fresh meadows, juicy citrus bursting out, mangoes, and fresh ripe fruit. Simply stunning.

Taste: Sweet citrus, mangoes are strong and a bit of herbs scratching at the back. Some lemon minus the tartness. More rough than the aroma would have me believe.

Mouthfeel: Very full-bodied yet not heavy and ABV is well masked.

Overall: Aroma is simply magnificent but the flavor turns out more rough around the edges. This is still a high quality brew and worth checking out.

Dieu Du Ciel never fails to impress me. Even when they dont get it right, you gotta give them credit. But this one, in my opinion is nearly perfect. The BEST "New World" triple i've ever had, hands down.

As expected, pours golden and clear with a clean dense head. The body is PERFECT in this beer, i mean you just take a sit and it coats your mouth just enough but at the same time allows the refreshing flavor to come through.

Smells of lemon, orange/citrus a touch of pine a touch of mandarin with perhaps a little pickled sushi ginger!

Taste is superb, basically all the smells with a nice malty backbone and a wonderfull lingering bitterness. The bitterness reminds of of pickled ginger and hops, its very interesting.

Superb, a new favourite.

341ml bottle poured into tulip 7/5/12

A clear golden orange with lots of tiny suspended particles with only a few bubbles moving it around, not much visible carbonation but a thumbs width of dense foam hold on for a few sips leaving random lace

S Belgian yeast at first then a bunch of tropical fruits, mango, passion-fruit, melon, pineapple and lemon just a little clove, faint cat tinkle and a hint of booze but would never guess its over 10%

T some peppery spice I didn't smell and the yeast is somehow stronger with less of the beautiful tropical notes from the smell, still very good but I loved the smell

M low carbonation but not flat, has more body then one would guess from the color and very little heat, finish is spicy and lingers

O very solid stuff, well concealed booze great smell and good taste, I cracked my second bottle well before I got to this point in my review, perhaps too easy too drink

I don't think I'd bother aging one of these because its drinking great fresh and the booze is already hidden quite well. yet another winner from DDC and I just cant wait too see what they come up with next

A: Hazy orange and brownish color with a nice foamy egg shell white head. Retention is good.

S: The citra hops are definitely there. There is a sweet grapefruit juice, orange juice, mango and pineapple. It's weird to mix this with a belgian yeast but it's definitely working. The coriander, cloves and light honey makes up the tripel part of the beer.

T: Just like the smell: coriander, cloves, honey for the Belgian part and exotic fruits with light pine notes for the hops.

M: Quite bigger than expected. Medium to heavy body, pretty sticky, medium carbonation. Very smooth.

O: This is an interesting beer from DDC and it works pretty well. Would definitely like to have it again.

12oz bottle from Marche Omni QC for 2.49$

Appearance - Hazy amber colour with an average size fizzy off-white coloured head. There is an average amount of carbonation showing and there is some great lacing. The head lasted for around 4 minutes before it began to dissipate.

Smell - Hops, grapefruit, pineapple, yeast, spices

Taste & Mouth - The beer has an average amount of carbonation and I can taste hops, grapefruit and something along the lines of pineapple/apricot. There is also strawberry, ripe banana, and a bit of a coriander/yeast spiciness. It ends with a sweet and hoppy aftertaste with a touch of a funk flavour.

Overall - It's really amazing how well the booze is hidden with this one. The taste is quite interesting and I'm sure that this beer will be a hit among craft fans. Not their best beer, but one the definitely warrants trying.

Tap at Winter Warmer: Poured a cloudy dirty beige color ale with a large foamy head. Aroma of pungent hops and semi-sweet Belgian-style malt is quite interesting. Taste is a nice mix between some pungent herbal hops with nice floral notes which are well balanced against some semi-sweet Belgian-style malt with light residual sugar notes. Body was quite full with limited filtration and good carbonation with no apparent alcohol. This was quite a treat and something I would buy often if it was to be bottled.

On draught at WVRST for the DDC party. Into a tulip.

Hazy bright orange with a white head. Good retention and sheets of lacing. Nose has some grains, spice, yeast, light citrus and some understated sweetness. Citra was as prominent as expected. Taste reflects this again, with the Citra not being as central as I had anticipated. Some juicy hop notes however and general fruitiness. Quite malty, some yeast and white pepper. A good suggestion of alcohol as well, but this doesn't affect the feel. Medium carbonation and thick body. A maltier tripel, quite good however I wish the Citra was more overt in the nose and flavour.

very good, on tap at WVRST. Really hoppy and drinkable, the combination making for a great Belgian IPA. Funky aroma. Orange colour. Thick lace sheet.Above average mouthfeel from the significnat yeast, that adds sweetness and does not track from the edgy citrus hops.

Beer is amber/gold with a nice white head. Good retention and amazing lacing. Glass is just covered in white foam.

Juicy citrus fruit in the nose, and floral scents. Hop focused but with a sweet malt background and some yeast.

Wow! Tastewise, this is fantastic. A real mix of a tripel and the flavours of citra hops. Tropical fruits, yeast, caramel malt, grapefruit, mild bitterness coupled with sweet malt. There is a LOT going on here. Very complex and good. Hard to describe.

Full bodied, moderate carbonation, alcohol quite well hidden. Smooth, slightly oily.

Overall, excellent. My favourite beer that I had while at Dieu du Ciel, for sure. A real winner.

A: Pours a slightly hazy golden orange in color. The beer has a quarter finger tall light beige head that reduces to a single large patch and a ring at the edges of the glass. Moderate lacing is observed.

S: Really enticing aromas from the citra hops used - lots of tropical fruit, primarily pineapple. Much different than I was expecting from a tripel.

T: The flavor is also really dominated by the tropical fruit + pineapple hop notes. There is a very pleasant lingering bitterness from this beer. Very little malty sweetness.

M: Medium bodied with moderate amounts of carbonation. Slightly sticky/resiny.

O: I would describe this beer as a tripel meets an American IPA. Really refreshing and something I could easily drink a couple of. Alcohol is very well hidden.

A: The beer is hazy yellow in color and has some amber hues. It poured with a thin layer of off white bubbles and has relatively good retention properties as the head never completely faded away.
S: There are moderately strong aromas of tropical fruits in the nose—pineapple seems to stand out in particular.
T: Similar to the smell, the taste has flavors of tropical fruits and a light amount of bitterness. There are some hints of spices and no sweetness is detectable.
M: It feels medium-bodied and somewhat smooth on the palate and has a moderate amount of carbonation.
O: The beer tastes strong but for the most part the alcohol is well hidden from the taste. The amount of hops seems to be very unique for the style, which almost tastes more like a hybrid between a tripel and an IPA.

On tap at the brewpub. From notes.

A - Poured a hazy dark gold with a one finger white head. Good carbonation and good lacing left over with an OK film of retention.

S - Mango, pineapple, yeast, apple, pear all present. Yup, this is Citra.

T - Booze with pineappple and pears. Lingers with a boozy pineapple note. A little like sherry soaked pineapple chunks or something. The booze is a little strong, especially when it warms up.

M - Strong carbonation with a medium body and a sweet finish.

O/D - Aroma was lovely but the booze is a little rough. The Citra also seems to overpower the Tripel elements as well. Good but the other elements could shine through if the hopping was toned down and the alcohol was masked better.

L'Herbe à Détourne is a beautiful cloudy straw coloured beer with a very creamy head and amazing retention. Just looking at this beer you know its going to be good.

I was completely blown away by the smell of this beer. So many different ingredients come into play and not one of them seems out of place. Citrus and floral tones dominate the beerscape, with notes of other sweet fruit like mango and banana.

This beer tastes incredible! It has very strong floral flavours complemented by cinnamon, perhaps even some conriander, and a definite touch of banana. Its quite sweet up front, but not in a malty way. I think its more a result of the fruit than anything else. The bitter finish complements it perfectly. It really has to be tasted to be believed.

Great mouthfeel, with great balance of sweet and bitter, relatively dry but creamy at the same time. I'd feel nervous drinking more than one at 9.5% ABV (the 10.2% listed for this beer is incorrect), but its definitely worth trying this at least once if you're lucky enough to come across it.

On tap poured into a wine glass.

Pours a hazy amber with a nice big pillowy white head. Nose is Hoppy, fresh and a bit fruity/funky.

Taste is quite sharp and hoppy with a nice light funk. Mouthfeel is light and dry, super drinkable. There's a good light tart taste, quite good.

On tap at Mondial beer festival. Belgian tripel with Citra!!! (my favorite hop). Intense, funky, earthy. I assume the earthiness comes mainly from the use of citra. These intense flavors blend beautifully with the complexity of a Belgian yeast. Add to this a flavor that I simply can't describe. Never tasted anything similar, ever. Lingering sweetness, maybe candi sugar and papaya? Awesome.

On tap at Mondial, and I think my first encounter with citra hops. This one came heavily recommended by a friend, and turned out to be a very tasty pick.

Hazy golden pour with a thick creamy head that left rings of lace on the glass as it settled to a heavy film. The aroma is awesome, with a boatload of sweet juicy citrus, tropical fruit, candy sugar and Belgian yeast. Its like some sort of delicious, juicy hop perfume. The flavour profile puts this more towards the more honey inclined tripels than the grainy ones. Its got a good dose of honey malt, biscuit and caramel, but really the hops are the star. Lots of sweet orange, pineapple and mango with a whack of pine, which provides an assertive bitterness. Nice phenolic yeast too. Medium mouthfeel and carbonation.

This is one hopped-up tripel, and true to form DDC nail it. Bravo fellas!

On tap at Mondial. This is a tripel with 100% Citra hops.

Pours a lightly hazy light golden yellow, a bit of straw in the corners, thick white head forms and settles down to a thick layer and ring around the glass, nice lacing.

Smell is great, very fruity, big citrus kick from the hops, grapefruit, oranges, some honey and toasty malt, alcohol, tropical fruit, yeast, still has that Belgian feel with a kickass hop presence.

Taste is similar, light and malty up front, some honey/caramel, biscuit, lightly sugary, fruit, alcohol, big citrus hop character, some pine, real nice finish.

Mouthfeel is light to medium bodied with medium carbonation. Wow, insanely hoppy tripel that still smells/tastes/feels like a tripel. Amazing stuff.
