This oak-aged gentle giant has been gaining popularity over the past few years and is now available year-round.
For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA.
After fementating the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month.
When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!

Poured from a 12-ounce bottle dated 6/19/09 into a Dogfish Head pint glass.
A: Poured a slightly hazy, burnt-orange amber color with a frothy, two-finger head of dense, dark manila colored foam. Medium, lazy carbonation is visible due to good clarity in the brew and clingy webs of lace line the glass.
S: Smells quite robust; lots of grapefruit and citrus as well as toffee and caramel aromas. Grassy, fruity and floral ale qualities are picked up with a somewhat smoky, burnt wood, pine-laced, spicy zest.
T: Flavor is big, sweet and sticky at first. Loads of sweet roasted caramel malt wash up front with a lush citrus fruit profile. Orange, grapefruit, apple and a bit of sweet raisin jump out of the mix. The malts and fruity ale flavors seem more mellow because of the oak-aging and bring a bit of that charred wood flavoring into the mix. Backing this is a sticky, stinging layer of citrusy and herbal hop flower characteristics. Oily and acidic with a sweet, semi-alcoholic finish.
M: Mouthfeel is big, sweet and sticky, but has a nice, mellow, smooth and somewhat creamy palate with a coating, full-bodied finish. Good balance with a bit left to chew on.
D: A big, dangerous sipper at 10% ABV and certainly one for sharing territory. I just happen to be taking down a 12-ouncer solo, but it's still pretty heady and delicious. I'd imagine it would pair well with BBQ or roasted meats, maybe even a wood-fired veggie pie. Could definitely see picking up a 750ml for a special occasion down the line.
On it's own, it's a slick, decadent treat for the DIPA enthusiast. I've got one more bottle aging a while longer, I suggest you'd do the same. That is, if you can resist Burton Baton's temptation.
