1 pint 9.4 fl oz. bottle, with no apparent bottled on date present. Was going to wait until tomorrow morning to crack this one, but I figured I would just nightcap tonight with it instead.
Poured into a Firestone Walker pint glass.
A - Pours a nice light burnt orange color with about a quarter inch of white foam head on top. A few lazy bubbles floating to the top. Very nice looking rings of lacing. Second pour yielded about three fingers of fluffy head with pretty nice retention.
S - Smells of fresh peaches and mango. Very fruity smelling upfront. Some spicy bitter hop presence.
T - Strong bitter hop flavors, but not overly dominant in the sense that the Dogfish Head 120 Minute IPA was. Calm, light fruity / floral notes tone it down in the finish. Perhaps a slight sweetness from the maple syrup in the end? Some burnt brown sugar flavor, also. Some warmth from the alcohol and the hop bitterness.
M - Feel ends with the bittering hops fading away to a smooth creamy sweetness. Medium bodied, medium balance. Decent levels of carbonation. Leaves a nice taste in my mouth, I can say with assurance.
Overall, a moderate beer, but doesn't live up to the hype. Was hoping for a more prominent maple syrup flavor in the profile. Pretty standard brew from Dogfish Head, much akin to the Dogfish Head 90 Minute IPA or a more toned down version of the Dogfish Head 120 Minute IPA, and not really breaking any new ground. Kind of a gimmick type brew in the Dogfish Head portfolio, one to try once and then skip the next time. The Dogfish Head Robert Johnson's Hellhound On My Ale is a far better IPA.

750ml bottle poured into a wide mouth wine glass. Bottled 2012. Had this on tap/cask a few times so very pumped to try the bottle version.
A: Wow, this is very carbonated. Pours a very head heavy. Its a very cloudy yellow orange color. Maybe more golden towards the top. Lots of sticky lacing left on the glass.
S: I definitely pull the sweet maple notes. It really masks the hop aromas that you'd expect from a DFH IPA.
T: On the front of the tongue, you get some of those normal piney hops. It's not overpowering at all though. In the middle of the mouth, you get this strange sweetness from the malts and the maple syrup I would assume. The bottle conditioning makes for an interesting feeling too.
M: Medium bodied, strange pillow-like mouthfeel.

On cask, via gravity fed firkin, @ the 2011 Philadelphia Real Ale Invitational (Yards Brewing in Philadelphia, PA) on 3/20/11. Served in a tasting glass.
Pours a mostly clear coppery gold, with a thin head of soapy bright-white foam. This retains with some light richness on the edges of the glass but the overall look here is kind of flat. The aroma is deeply sweet smelling with notes of maple, caramel, bread, and fruit. I'm definitely getting some bitter grapefruit, pine, and floral leafy notes that sit on the edges of the nose as well, but this is mostly controlled by the sweetness.
The taste is even more cloyingly sweet here in the taste, with a lot sugary activity going on from the maple syrup, fruit, and malts. Much like the aroma, a leafy, citric, and resinous bitterness hangs on the edges of the profile but the sweetness is almost overpowering, with a good bit of residual sugars hanging in the finish. The mouthfeel is medium bodied and lays a light prickle down on the tongue but this is overall smooth and creamy (and even a little syrupy feeling) in the mouth. I will say that 7-8% is well hid here and I found no problems with the alcohol presence here at all.
I like the effort here (and would even try this again on draft) but the maple syrup addition just puts the sweetness of this over the top for me. This was just a bit too cloying for my taste but I could see how some others might like it.

A: Pours a slightly hazy yellow-gold with four fingers of dense off-white head that recedes into a dense cap with very good lacing. Beautiful to look at, though a bit of a pain to pour.
S: Dry, piny hop aromas dominate with some sweeter underlying citrus notes. There are also some sweet syrup aromas. Overall the nose seems a bit muted.
T: Piny hops dominate on the tongue as well, giving a very dry and moderately bitter flavor. There are some faint citrus notes underneath and the finish and aftertaste are slightly sweet and bready.
M: Medium body with a good amount of carbonation, this beer feels very dry with the carbonation feeling creamy in comparison. An odd, but good, combination.
O: An interesting beer, overall, though somewhat simple. It'd be nice to have more depth of hop flavors and aromas. It's not as good as fresh 90 Minute, but it's still a decent beer.

Poured a medium golden amber that was very minimally translucent and appeared to be totally filtered. Produced a large, froathy, inconsistently dense laced head that remained for a considerably long period of time. The smells are not overly robust with hoppy explosiveness. They are darker hop smells along the pine side. The maple syrup 'bottle-conditioning' is not very detectable. This one might have a little age to it. Malts are noticeable. It seems as though it should be heavier than 7.50 abv. The mouthfeel has a solid bitterness which is expected from the smells alone. I know these have been around for a bit but I'm first seeing them in Chicago the last few weeks. I want to say it would be better fresher. This one, at least, doesn't compare to 90 Min. Glad I tried it.

Very nice looking beer. The beer practically glows with a rich orange-ish amber color. Nice puffy white head. Good lacing. Fairly hazy beer, which I sort of enjoy. Aroma is solid. Lots of citrus. Big grapefruit note. Some tropical flavors in the mix - pineapple, mango. Some raspberries. Warm caramel tone in the background. More hop forward than I expected. Pleasant yeastiness. I'm a bit less positive about the taste. It's just a bit of a letdown. A little too subdued. The hop bitterness is a tad bland. The maple syrup-tinted malt plays a larger role than in the aroma. Medium sweet for an IPA. Not quite as much yeast presence. Mouthfeel is harsh and odd. Bubbles are too big and strong. The beer doesn't puff up all that much in the pour, so this came as a bit of a surprise. The finish is also kinda sticky. It doesn't ruin the beer, but I think I'd strongly prefer this one out of a cask. Just doesn't quite translate to the bottle. Still, it's a fun beer, and as someone who isn't a big fan of 90 min or 60 min (I did quite like Squall) , I rather enjoyed this beer.

Pours a hazy darker amber with billowing, dense white head. Rings of lace down the glass. Smell: toasted grain, caramel, earthy, slightly minty, with some orange citrus. Taste: toast, tangerine, apricot, earthy with herbal notes. Medium+ bodied with a luxurious, creamy feel. Glad to have tried, but doesn’t quite impress. Bottled 2012 C.

Enjoyed in a pint glass
A: Pours a very nice golden honey brown that is nicely hazed and has an extremely aggressive pure white head that lingers for an extremely long time and is very fluffy, leaves a nice amount of lacing on the glass
S: The scent is of fresh hops which, to me, is reminiscent of the sixty minute, also has a very slight depth at the end
T: The taste is quite nice with citrus hops up front and then on the tail end kicks in the nice maple syrup flavor, slightly smokey lingers on the palate, slight alcohol note hits in the middle before being backed out by the maple
M: The mouthfeel is nice, average carbonation up front, very thin on the palate, lingering dryness is pretty apparent
O: Overall its a nice, drinkable ipa, unique use of the maple is nice but makes it a bit heavier than I had wanted

Poured from the firkin into a small snifter glass at TJ's during the Philly Beer Week Leftovers Event. Had this while they filled my growler with Registration Ale.
The appearance is nothing to get too exited over. It's poured out of a firkin for goodness sake! Dark brown and murky, there is no head (go figure). As much as I expected this, I am having a tough time getting excited just looking at it. Maybe the smell will help.
The aroma is piney and nicely balanced with a nice caramel backbone. Even so, I take caution at this, since in my IPAs, the caramel is something that I wish I didn't have to deal with. If I am gonna have malts, I'll drink a barleywine. The taste is a bit better. Dank hoppy bitterness contributed by piney hops highlights the flavor for me. I do love me some musty bitterness. Again, though, the malts come through a bit too much, making this a touch too sweet as the caramel overwhelms the pine in the finish.
Smooth as hell, this beer hides the alcohol well. I wish that the hops were a bit more potent though.

I had this on draft at Dogfish Head in Rehoboth, DE. It came in a nonic glass.
Appearance: The head is a bright white color, with soap sized bubbles, no lacing, and great retention.
Smell: The aromas are roasted nuts, pine resine, and caramel.
Taste: The flavors are toffee, pine needles, and lemon.
Mouthfeel: The mouthfeel is thin with a crisp and dry finish.
Drinkability: This beer is very tasty.
Don't drink and review.

Served on tap in a pint glass at Fountainhead.
Appearance: 75 minute IPA is a translucent copper color with a well-retaining white head leaves layers of sticky lace down the sides of the glass.
Smell: Light caramel malt, nice citrusy hops, and a bit of herbal hop aroma as well.
Taste: The flavor is a clear balance of the 60 and 90 minute IPA's. There is some lighter malts that are mostly overshadowed by a darker caramel malt, and then the hop additions are reminiscent of each beer in equal parts. A citrus and pine blend work well with the sweet malt, and the strong bitterness from 60 minute stays a bit more in the background.
Mouthfeel: The body is on the lighter side of medium, with a nice hop presence cutting through any heaviness that would otherwise linger from the malt. Medium carbonation and lightly sticky.
Overall: As a mix between the 60 and 90 minute IPA's, this demonstrates characteristics of both. Since I enjoy 90 minute and think 60 minute is just so-so, this falls somewhere in between.

Bottle pour sampled at mrbubbler's tasting.
Pours a murky honey orange with an off-white head that settles to a small cap on top of the beer. Foamy rings of lace form around the glass on the drink down. Smell is of malt, citrus fruit, and citrus zest. Taste is pretty much the same with a mild bitterness on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a pretty good IPA but nothing all that special.

App- A glowing dark orange with some light orange/yellow highlights. A MONSTER 4 finger head with the most amazing stick and cling. One of the best looking beers I have seen.
Smell- I don't toke but I know that smell and this is that smell. Just dank, herb, earthy. Not sure if its the Maple syrup or the combo with the hops but hot damn sam!
Taste- At least all of the dankness didnt carry over to the taste. A nice mix of earthy pine with some tropical citrus and a mix of the maple syrup. Wasnt the greastest IPA but also wasnt the worst.
Mouth- A earthy medium body with a bit of the maple sticking around and a bit of citrus. A medium carbonation with some soft bubbles.
Drink- All in all, it was okay. I wanted to like this a whole hell of a lot more. I have another bottle of it so hopefully I wont be let down 2x.

A: This poured a hazy gold with lots of light tan head.
S: It smelled like grainy wheat bread with some earthy caramel and maple and pine.
T: It tasted the same as the smell, with a surprising amount of bready character, and only subtle hops or maple. It had a mostly clean and sweet aftertaste.
M: It was somewhat thick with moderate carbonation. Fairly full body.
D: This was a decent beer, but really not that great. The smell and taste were ok, and the body was better. It had a smooth finish, so it was easy to drink. Not a bad brew, but really not worth seeking out.

A: Dark amber or light brown in color. Forms a smallish off-white head that reduces to a thick ring around the edge. Copious amounts of lacing.
S: Aroma is fairly earthy, with a notes of caramel malts and green, herbaceous hops and a bit of citrus rind.
T: Taste is sort of similar to the aroma, starting off with a good amount of caramel malts. There is a slight woodsy quality, some grapefruit pith, and a little pine. Then comes a mild maple sweetness and some herbal hops. Finishes with a light sweetness.
M: Medium bodied, medium carbonation, moderate bitterness. Smoothes out as it warms up.
O: This beer is a bit of a dichotomy. In one sense, it tastes just like an IPA should, but then there is the maple sweetness that is entirely out of place in an IPA. I'll admit, I prefer West Coast style IPAs, but I can appreciate a mildly sweet IPA when it's made well, but the maple in this beer just doesn't blend well and does absolutely nothing to improve it.

Bottled in 2012 but the rest of the date code is smudged.
Served cold into a goblet, 75 minute is a hazy copper color with thick white head. It settles slowly and leaves some nice lace.
Aroma is definitely hoppy with some nice orange zest and minty hop character.
Flavor is intensely bitter, moreso than I was expecting honestly. A small hint of that maple sweetness comes throughat first but then it's all just big hop bitterness. A combination of grapefruit and mint comes on strong. It finishes very dry.
Mouthfeel is medium bodied and, in my opinion, over carbonated. I know these are bottle conditioned so I expected it to be a little softer.
Overall pretty good but not something I would get again.

Poured into a nonic pint...
A: Pours a medium to light golden color, slightly pale. A little cloudy. Massive three-finger head that resembles a mountain range...all kinds of peaks and valleys. Great lacing. One of the most aggressive heads I have seen from a relatively careful pour. Looks great.
S: Orange, mango, tangerine....a tropical citrus powerhouse. Also a cloying, honey-like sweetness that could be the maple syrup...well-integrated, though, and not overwhelming. Little bit of lemon rind kick at the end and some green tea herbal qualities. A lot fruitier and juicier a bouquet than most IPAs, with an interesting herbal blend.
T: More citrus notes...orange, mango, tangerine. Perhaps just a touch of resin and some herbal bitterness. Sweetness kicks in mid palate and evens out the finish...this must be the maple syrup, though it's not immediately identifiable as such. I also get quite a bit of mint on this...enough to make my mouth tingle. A little tannic bitterness at the finish that I think tastes like barrel, though I'm not sure if this was barrel aged or not. The finish has a lot of citrus bitterness.
M: Drinks a touch thin, which I attribute to less than stellar carbonation and some citrus flavors that don't quite meld well with the bittering hop oils.
O: Like just about everything else DFH does, this is interesting but not amazing. A lot more fruitiness than most IPAs and balanced with fairly aggressive wood and hop notes. Carbonation is a bit low and the flavors aren't as well-integrated as they should be. A bit of a tannic sweet fruity finish mars the experience on this one a bit, but still a solid IPA. Good job, DFH.

Dogfish 75 Cask at Dogfish Rehoboth, served in a "perfect pint" glass.
Appearance: A hazy amber that glows. Slightly transparent. Huge frothy fluffy white head, about two fingers.
Smell: Some muddled citrus, orange. Faint hops and sugars. A bit of pineapple and sweet fruits.
Taste: Noticeable sweetness, but no maple syrup (which appears to be one of the ingredients listed). Citrus again, coating the mouth.
Mouthfeel: Light feel, medium body, low carbonation (almost too thin, even for a cask). Served a little cold for a cask, but fine. Also, a bit too sweet.
Drinkability: Good but not great. The sweetness gets tiresome after a while. Glad I tried, but wouldn't session or drink often.

A - Hazy copper in color with a frothy eggshell head. Okay lacing.
S - Hops abound, citrus and pine aroma. A little malt in the background.
T - Malty and slightly sweet. Hoppy and orange peel. Not a huge bitter finish.
M - Medium carb/body. Finishes dry.
O - Better than the 90, IMO. Less malty but I wish this beer was brighter in some aspects.

750ml bottle found at BevMo in Valencia, CA. Pours a highly carbonated, cloudy, golden-orange color. The head is fluffy, white, and slow-going down. Scent is nothing like I thought it would be. When I saw that this beer was brewed with maple syrup...I was expecting it to be the most malty of 60 and 90 minute. However, both 90 and 60 minute are more malty than 75. Weird. Scent is a bit underwhelming with mellow hops...and hints of honey. Struggling to pick up the maple syrup. Taste is...still no maple syrup. I think I enjoyed Squall much more than this. Hops...but lack of depth. Doesn't have that malt profile that 60 and 90 minute have...yet, doesn't have that hoppiness I love as a California craft beer drinker. Mouthfeel is great with the smooth, creaminess. Not too harsh on the bitterness. Overall, I would drink this one over 60 and 90 minute any day. However, I need to review this to the style. It makes no sense for an IPA that claims to be in the middle of the two maltiest IPAs I've ever had...to be not that malty at all. Again, weird. Tasty beer overall.

Appearance: Clear golden with visible effervescence slowly floating up towards a two finger soapy off-white head. Later pours were cloudy do to the sediment in the bottle. Decent lacing.
Aroma: Pine and citrus hops. Caramel malts in there but can't detect the maple syrup.
Taste: Lighter than I was expecting. I thought it would be maltier but there is a good caramel background that is balanced by the type of piney/citrusy hops that DFH usually implements. The maple syrup element peeks through just a bit on the finish and aftertaste which is probably the best outcome for this one. Decently bitter at 75 IBUs but not overwhelming dry. Seems lighter than 7.5% ABV in my opinion.
Mouthfeel: Above average carbonation (due to the sometimes inexact science of bottle carbonating I think). Between thin and medium in body, never sticky or syrupy as the ingredient list might imply. Easy drinkability.
Final Thoughts: I liked it, but I wasn't 'in like' with it. I was lucky enough to share this bottle with someone but I don't think it's worth the $25 they payed for the bomber. Just feels like it's missing something that could bring it to that next level. Would I drink it again? Probably not unless I was at the brewery having it on-tap.

Poured from a bomber into my DFH signature glass
A- pours a clear dark copper color, nice steady stream of bubbles rise to the surface, a one finger white fluffy head appears on the pour and dissipates after a few minutes, decent lace left on the glass
S- sweet and hoppy, citrus fruits, slightly woody, i'm getting some spices mostly pepper
T- starts light and sweet, moves into a pretty strong hop punch, woodiness, the hops are more grassy than citrus, i feel like the flavor is lacking
M- medium-light body with a silky feel, fairly high carbonation, finishes dry and clean
O- I wasn't impressed with this one, i wish the hops would have brought a little more character to this brew, i'm kinda surprised everyone else rated it so highly, 60 and 90 are much better brews from DFH

Served in a sample cup at the Lupulin Slam.
Appearance: Hazy, honey color with a frothy and rocky white head, which recedes to a film and a ring in good time. Wee blobs of lacing were left on the glass.
Smell: Herby, almost minty, smell of hops. I was reminded of German nobles for some reason. Peppery, grassy, and brassy.
Taste: Melony fruit sweetness with some peppery and herby hop tastes. The hops and the malt don't really mesh well enough to make this truly stellar, but that might be me not liking the hop profile.
Mouthfeel: Medium bodied, nice and crisp. Palate cleansing.
Drinkability: A nice, but odd, hop profile. I think I'll take the 90 minute IPA by itself, thanks.
Other: Created especially for the Lupulin Slam, this is a 7 barrel batch of beer that mixes essentially equal portions of 60 and 90 Minute IPA together, plus a crapload of hops, among which were Columbus, Chinook, Amarillo, and Cascade.

Big bubbled head that settles to nothing--no lace, obviously. Lightly hazy. Dark amber color.
Served warm, the floral hop is really pronounced.
Very low carbonation, even for a cask conditioned beer. Excellent malt beginning--the sugars are caramelized so the beer is not sweet. For an IPA, this is a malty brew. Good hop presence, but not extreme in any sense. Long bitter aftertaste tells you this is an IPA. Still, I find the flatness a distraction.

Served in a nonic pint glass
A - It is tangerine colored with golden highlights. My first inattentive pour yielded a half a glass of tan head. Subsequent pours were about two inches.
S - As with 60 and 90 minute, this beer has a solid malt backbone. I get some caramel characteristics along with some alcohol and spruce.
T - It has a biscuit malt taste. The finish has plenty of pine flavor. I get a little maple in the aftertaste.
M - It is full bodied for an IPA. The mouthfeel reminds me of an English ale.
O - It has been awhile since I have had a 60 or 90 minute IPA. This beer is more malty than the IPA's I have been purchasing lately. I used to love the maltier IPA's when I was a young BA. I now prefer the citrus, mid-western style of this ale. It is a good beer, but it is no longer as agreeable as it once was with my palate.
