This was a very pleasing beer to finally taste. They only offer it at the Rehoboth Brewpub and tap a cask every Thursday. It tends to run out quickly so get it while you can when you're in the area!

Despite the name this beer is not boiled for 75 minutes, but rather is a blend of 60 minute and 90 minute IPA and then cask conditioned. It also has the name of Johnny Cask at Dogfish Head.

The beer is darker in color than the 60 or 90, a dark red orange color. It is not as carbonated and I found it not quite as fragrant either. However this leads to a very pleasantly drinkable beer. It has a very soft and creamy mouthfeel, has a larger head and better lacing than the 60 minute. Still very flavorful and flowery. The hop flavor comes forward more than the bitter citrus notes that are prevalent in the 90 minute. Additionally, this beer is sweeter in a floral sort of way over the 60 or 90 minute.

Material describes the beer as being served on DFH's Johnny Cask system, w/ extra dry hopping and maple syrup additions.

Pours a cloudy, muddy amber brown color, with nonexistant head. Smell is of fresh hops and sweet malts, with a carmel covered nut like scent. First taste if of the citrusy, piney and bitter hops, moving into a mellow sweet carmel molasses like taste... hints of raosted nuts as the big flavors clear. Heavy body, yet smooth cask beer feel on the palate, little sweet and bitter aftertastes. Decent beer, worth a try but nothing earth shattering.

Pours amber in body with a creamy, white fluff head that lasts. Aroma of grapefruit, wet grass, citrus with rind, juice. Flavors of citrus, grapefruit, thick syrupy malt, wet grass, biscuit, and a tad of vanilla with big bitterness. Incredibly smooth and thick in body, almost no carbonation. Heavy in body with great warming characteristics. This is my favorite DFH offering, an experience you have to take part in.

Served up a slightly hazy copper amber with parchment head. Great head retention and average lacing. Aroma is of citrusy American hops and caramel malt with a touch of earthiness. Mmm, I love 60, I love 90 and I love cask beer. This is a match made in heaven. Grapefruit, floral hops and nice biscuit malt combine with caramel and brown sugar notes in a super smooth glass of IPA heaven. It is really interesting how the two beers combined create something totally different. Maltier than 60, but seemingly has more hop presence than 90. Superbly balanced. As mentioned before the mouthfeel is wonderfully smooth with subdued carbonation. Medium bodied, but served up on cask I could suck these down all night. Highly recommended.

Pours a clear amber color with a nice tight head which gives way to nice lacing the whole way down the glass. The aroma is of caramel malts with some brown sugar as well as a little citrus and earthy hops. The taste is fantastic it starts off with a caramel malt and sweet malt taste with hints of brown sugar sweetness. After the malt taste a nice citrus and earthy hop taste takes over. It is like a perfect combination of the 90 min and the 60 min. The mouthfeel is medium bodied. The drinkability is also fantastic you could easily drink these all night and continue to want more. There is more than enough flavor to keep you interested with nothing to dislike.

Served in a DFH Alehouse shaker pint glass.

Pours an clear amber straw with about a finger-and-a-half of creamy white head that laces quite well. The aroma is full of hops, mostly piny but with a nice bit of citrus and bitterness lying underneath. The taste follows, with those hops providing a boost of pine, bitterness and citrus (in descending order). A slight honey-like sweetness is subtly perceptible. The body is fairly moderate and runs quite smoothly, allowing for a pretty drinkable brew (especially if you're into hops...).

Served in a pint glass

Stunning appearance. Golden-amber and nearly crystal clear with a tight, foamy, light beige head that slowly faded to a resilient cap of froth. A lattice work of webbed lacing stuck all down the sides of the glass, lasting long after the beer was finished.

The aroma was hoppy. Zesty and citrusy with notes of candied orange peel and ruby red grapefruit. Sweet caramel malts were noticeable as well.

The taste was similar to the aroma except far more punchy and complex. Brown sugar notes played out in the malty sweetness before the hops took center stage. American, c-type hops dominated the hop profile. Citrus notes came through loud and clear. Grapefruit dominated but orange peel and suble tropical fruit flavors appeared as well. The finish was pure pine sap. Sticky and resiny yet well balanced overall. Wow.

The mouthfeel was everything a great IPA should be. Medium-full bodied. Soft and pillowy. Creamy and smooth with a fine, tongue caressing effervescence.

Drinkabilty was amazing. Aside from the fact that this beer is so tasty and balanced, I was simply astonished that it weighed in at a lofty 7.5% ABV. Dangerously sessionable, to say the least.

I usually tend to think of beer blends as gimmicks but 75 Minute IPA has changed my mind on that notion. This beer combines of sweetness and complexities of Dogfish Heads's 90 Minute IPA with the pure hoppiness and drinkability of their 60 Minute IPA. I cannot wait for this one to be bottled.

I had out of a gravity dispense cask at d.b.a. in Williamsburg, Brooklyn. It has a rusty color with some head and is slightly opaque. It has a nice hoppy scent wit ha fruity mix.

It has a very smooth hoppy taste at first followed by a bit of sourness. It says there's maple mixed in, which probably gives it its strong sweetness. It also says that it's a blend of the 60 and 90 minute IPAs...so there no wonder why I love this beer.

Pours a hazy orange amber. Looks almost rusty.

Aroma is strong citrus and floral hops.

Very strong citrus-fruity sweetness. The hoppiness seems to have mellowed a bit in the cask, but it's still there for sure, and brings a nice little bitterness along. They come together very well.

The mouthfeel sets it apart from most casks I have had. It seems grainy almost chewy in a good way.

I usually have one or glasses from a cask and then move on. I could drink from this all night.

Cask at Rattle-n-Hum in NYC.

Pours a hazy copper color with a large-bubbled off-white head. The head recedes into a thin ring around the glass leaving solid lacing.

Smells of caramel malts with a good deal of breadiness along with hop aromas made up of citrus and tropical fruits.

Tastes good. Pale and slightly caramel malt flavors kick things off and are given substance by light bready flavors. Midway through the sip the hops take over (more so than I was expecting from the smell) and carry through to a solidly bitter ending.

Mouthfeel is good. It's got a nice thickness with soft carbonation.

Drinkability is also good. I finished my glass without a problem and could have another.

Overall I'm glad I finally came across this beer, and a cask version nonetheless. Hoppier than one would expect and worth a shot.

Had this at the Dogfish Head Alehouse in Fairfax Virginia. This beer is a mix (a la Black & Tan) of 60 minute & 90 minute IPAs. It is mixed at serving time. I've had both the 60 minute & 90 minute IPAs many times. I was looking forward to this as I thought it would balance out some of the weaknesses of each.

My experience was a bit mixed though. My impression was that I received mostly 60 minute IPA in my pour with not much 90 minute IPA in there.

It poured a dark gold with a little pale cream head. Good carbonation throughout.

Smell was hoppy with just a tinge of malt. To me, this wasn't much different than the 60 minute IPA I had the following day at a different pub. Good solid IPA aroma, but not anything exceptional.

Taste was nice -- more balanced than the 60 minute IPA. There was a hint more malty sweetness and caramel than is found in the 60 minute. Nicely balanced beer.

This was overall, an easy to drink, good but not especially "off-centered".

Had this on cask at the British Beer Company in Walpole, MA

A - This beer is a deep orange color with a small but thick creamy white head that settles in my pint glass quite quickly leaving some sticky and resiny lacing on my glass.

S - There is a strong abundant hop presence with this beer. It includes elements of citrus, maple, freshly baked bread and yeast. The beer has an extreme hop profile but seems to have a balance of malt and yeast on board. Hints of maple syrup are present in the smell.

T - Floral hops and hop resins are present in this beer. Alcohol presence in this beer is moderate. There is a maple syrup component to the taste as well. I can taste some spicy notes and an ever present flavor of yeast in my glass as well. The cask conditioning and warmer serving temperature really accentuates the flavor profile.

M - Smooth, creamy and resiny feel to this beer with a moderate alcohol warming sensation. The finish is crisp but well hopped on my tongue.

D - Very drinkable IPA that really does well with the cask conditioning. The flavors jump right out of the glass with this beer. Very complex but not too overpowering. I could definitely session this beer.

Re-Post as I am told that ALL DFH 75 Minute is the Maple version.

I had this at Deep Ellum this week and was quite intrigued by it.

Came in a pint glass with a thin white head that actually faded rather quickly. The beer was a very clear bright orange amber color. Not much in the way of lacing was left behind.

Aroma was a subtle hop aroma with some typical DFH 90 malt aroma. Not really sure I detected any maple at all. A subtle sweetness.

The flavor was really smooth and very well balanced. The flavor was classic DFH 60/90. There is a smokey/peaty note to their malt and it was clearly here. There was a softness and delicate sweetness that I think was the addition of the maple. It's very subtle. I was with a buddy who had a pint and we both commented on the subtleness of the maple. I think it rounded out the flavor more than anything else. The maple seemed to make an appearance with the hop finish...

Smooth mouth feel with, obviously, very little carbonation.

I found this to be very drinkable and a beer you think you could drink all night. At 7.5% abv it would kick your butt a bit though.

I was very happy to have tried this gem...

I am going to put that this was brewed once as I have no idea. If someone needs to change that, please feel free.

Last time I visited rehoboth Dogfish ran out of 75 minute Johnny Cask within 24 hours and I was unable to try it... Luckily, this past weekend I had 2 pints of this elixir and it was quite amazing.. Pour has an amazing cascading fall in the glass and it is amazing.. almost like when you see nitro stout like guinness fall.. its really incredible and foams into a huge frothy head. Aroma is hoppy and sweet though kind of light. Flavor has an interesting mix between the floral hoppiness of 60 minute with the sweet, sugary backbone of 90 minute. Cream soda-like. Quite interestingly complex. Mouth is silky and velvety.. very smooth and creamy. Amazing. All around it is absolutely delicious and the mouthfeel is exceptional. Could be a bit tough to drink more than one as it feels a bit heavy when sipping. A must try.

served from a hand pump 8/6/09

Appearance: Foams itself up immediately upon being forced by hand into the glass. The bartender waited a good minute or three for the majority of the head to subside to give the glass a few more pumps. The retention is good and rings of lace are left behind after each sip.

Smell: A perfumed aroma of hops is both citrusy and floral. Plenty of underlying caramel malts.

Taste: Wow. A mix of 60 minute and 90 minute spells W I N N E R to me. Floral and citrus hop flavors include grapefruit, grass, rose and hyacinth. Lots of caramel malt to give the beer a sweetness and backbone. Delicious.

Mouthfeel: A definite strong suit of this beer is the mouthfeel, perhaps because it is from a cask. It is very, very fresh and smooth. Alcohol is available and welcomed along with the distinct sweetness of the malts.

Drinkability: This could be one of the best Dogfish Head beers I've had to date. I'm glad I had the chance to try it, and would always buy it if available.

A- Poured a beautiful amber color (nearly identical to the DFH Shelter Pale Ale), with about one finger's worth of white foam atop. As the head slowly receded, it left some beautiful lacing behind. A little evidence of carbonation.

S- Hops dominate the nose here... I detect a blend of both low- and high-alpha hops... translating into some restrained citrus notes. There is some slight underlying sweetness and oakiness on the nose as well...

T- Despite the hop-dominated nose, this beer is surprisingly balanced. The slightly citrus hops are met with some nice caramel malt up front. The hop character becomes dominant once again in the finish, which is somewhat dry... unlike some other big IPAs, I don't find the hop character overwhelming at any point in the experience...

M- Slightly creamy and almost a touch gritty with all the unattenuated sugar. Nice firm body with just the right amount of carbonation... the hops also seem to make my gums tingle a bit (seemingly with excitement)!

D- Very drinkable, but I suspect the alcohol would sneak up on you after a couple of these...

NOTES: I'm typically not an IPA fan, but this beer could make me an IPA fan yet!!

On caske at Novare Res DFH night.

Pours a deep golden amber with a small head, basically no lacing. Taste is phenomenal, lots of hop complexities to it, very smooth and thick. Very little carbonation as you'd expect on cask. The extra dry hopping adds a lot to this over their regular 60/90min IPAs.

Overall this is super drinkable and one of DFHs best IPAs, worth seeking out!

Served from the first cask of 75 min IPA in Maine; poured into my Uprising Chalice. Pours a rusty orange color with a slight head of small white bubbles. Aroma is full of subtle hops. It doesn't overpower, but it is still quite strong. The taste is great. Not as hoppy as I thought it would be, but the hops are still there. You can also certainly taste the maple syrup that was added to the cask. As expected, there is low carbonation; also has a light body. This is incredibly drinkable. You could keep ordering these all night long. Very enjoyable. If a cask is tapped in your area, it is worth seeking out.

Another major score, courtesy of Paul Pendyck of the GEN Sutter Inn in Lititz! He has truly spoiled the denizens of Lancaster County with his monthly Cask Night. I love to travel, but PA ranks among the best that the US has to offer.

It came with two thick, foamy fingers of eggnog colored head with fantastic retention. Color was a slightly deeper amber than the 60", but still with a fantastic NE-quality clarity. Nose was floral, piney, more in line with what I like in an IPA. Mouthfeel was slightly fuller than the 60" and more malty at the same time. Actually, it felt like there was a power struggle going on atop my palate betwixt the malt and the hops with neither gaining the upper hand. It was on the finish that the hops became truly assertive. I got a spearmint flavor that lingered. It was not Life Savers or chewing gum prevalent, but it was definitely spearmint. It triggered a memory but I could not quite dredge it up - I used to know which hops strain imparts that flavor, but it simply eluded me. An excellent beer, highly recommended, especially on cask!

This is one of my favorite IPAs. I tasted this a while back and it was unbelievably good. I will skip the look of the beer and focus on the hop to malt to maple syrup ratio. Sweet, floral, spicy, and rounded out by the maple - it is really something! Citrus hops with floral characteristics meet the toasted malts and are enveloped by maple. Need I say more? The maple syrup is from Sam's father's farm in Mass.

I have had the Pliny's and other top rated IPAs and I must say this is right up there!

I know people are quick to say this a combo of 60 and 90 minute and as an avid Dogfish IPA drinker this far from the truth!

This beer is much smoother with a golden color and smooth taste from start to finish! Since fermented in a cask it doesn;t have the harshness that forced carbonation has! Much much smoother!

I had this several times at Rehoboth Brew Pub. I think that people who have left less than stellar reviews haven't had the best batch or the bar didn't handle it properly. Everytime I've had it at the Brewpub it has been stellar!

On-cask at the brewpub. Mmm. Delicious. This is certainly my favorite of DFH's IPA series. And while it's just a mix of the 60 and 90 minute, I don't think it really tastes like either. It lacked the dry biscuit malt of the 60 and had much softer fruitier hops than the 90. The flavor started with a mild earthy note followed by a long-lasting taste of apricot, then lemon rind, and pepper with grapefruit and a vague citrus punch in the background. The aroma was a bit more floral with a hint of that biscuit aroma. Overall it was very tasty and very drinkable. Check this out.

On the new "Johnny Cask" system at DFH Rehoboth on 6/19/09.

A - Clear amber/orange body with a tight, creamy white head that settled into a quarter inch of retention and left plenty of thick, sticky lace around the glass.

S - Bold hop presence boasting perfumy and citrus notes with a subtle waft of alcohol. Malt character is rich, sweet and caramely.

T - Floral and perfumy hops dominate the flavor of this IPA, although some citrus notes emerge as well. Alcohol presence is pretty subtle overall, especially compared to 90min. A hefty caramel malt backbone brings everything together in the finish, and is accompanied with a spicy peppery character.

M - Smooth, creamy texture with very soft mouthfeel overall. Fair amount of alcohol warmth, but not biting or overly hot. Finishes with a huge lingering bitterness on the palate.

D - This IPA combines the drinkability of 60min. with the aggressive hop character of 90min. but minus the latter's alcohol presence. Very nice cask offering from DFH.

A dark yellow with a hint of brown. Not much head but not expect when on cask.
Great hop aromas, maple syrup and a little citrus.
Some fruit esters with a subtle bitterness finished by a great malt presence. What a fantastic balance. Maple syrup once again adds a pleasant sweetness.
Nice body but carbonation was low, due to the cask.It should be noted that this actually contributed to the drinkability.
A great beer I will enjoy next time its available.
