The difference between tasting this beer poured from the cask and drinking it from a bottle is akin to the difference between the minor and the major leagues.
From the cask this beer has the perfect aroma of citrus and hops.
The greatest thing is how it feels. It is dangerous drink since it feels creamy and pleasurable, like a tall glass of chocolate milk.

Meadhall in Cambridge for 12 Brewers of Christmas.
A: Super hazy, thick, golden orange yellow. Looks like fresh pressed apple cider. Big frothy white head that fades into huge lace and good retention.
"Holy shit!" This applies to both smell and taste.
S: Incredible bouquet of honey, fresh fruit, wildflowers, fresh mountain air, earth, more fruit, something more I can't describe. Unbelievable nose. Better than a 5.
T: now this is what an IPA on cask should taste like! Huge onslaught of bright american hops followed by honey, fresh cut grass, earth, some wood, ripe fruit, yeast, and a touch of malt. The sweet sugary malt shows up as does the maple syrup, albeit very faint. It does contribute to the balance, though, because the hops can be powerful at times.
M: Massive, complex flavors, crazy balanced, and superbly crafted. Can be a tad cloying and almost too thick of a body for the style after a few successive sips. But the flavors erase those deficiencies.
O: This is the real deal. Beers like this are why I will never hate on Dogfish nor Sam for his ambition. Some beers are hit or miss but overall the love is there and beers like this are there. This is a phenomenal beer.

Big bubbled head that settles to nothing--no lace, obviously. Lightly hazy. Dark amber color.
Served warm, the floral hop is really pronounced.
Very low carbonation, even for a cask conditioned beer. Excellent malt beginning--the sugars are caramelized so the beer is not sweet. For an IPA, this is a malty brew. Good hop presence, but not extreme in any sense. Long bitter aftertaste tells you this is an IPA. Still, I find the flatness a distraction.

This beer was enjoyed at the Dogfish Head Brewery and Eats in Rehoboth Beach, DE. Served from a cask at 55 degrees.
Served in a pint glass
A - Beer arrived at the table with a half-finger head. The beer was a very hazy, nearly opaque golden/amber color. Decent lacing left on the glass.
S - The standard aromas of an IPA are there but a slightly sweeter smell.
T - The beer was a tamed down version of the DFH 90 minute. It has a larger malt presence than the DFH 60 minute but not quite as heavy as a 90 minute. A nice combination of the two beers. It does taste a bit more sweeter than a 90 minute which is probably from the addition of the maple syrup although I don't taste much maple. It retains all the bitter hoppiness that I enjoy so much. The ABV is slightly noticeable.
M - A medium consistency. Possibly due to the cask, there was little to no carbonation.
O - I've always wanted to try the DFH 75 and I was impressed. A great combination of two classic beers with a little tweaking with the addition of some more sweetness. I could see myself drinking this quite often if it was available in 12oz bottles.

Served from the cask at Ernest and Scott in Wilmington, DE.
Pours real dark caramel with hints of red and copper. Thin and bubbly white head, which starts out at about a finger or less but thins out to the edge. Can see through this beer. Roasted caramel and maple incorporated in smell, along with some light floral and malt hops. Taste dominated by caramel with hints of maple and bready goodness. Mouthfeel is light, creamy and smooth with a bit of bite, not much. Overall really like this from the cask.

On cask at their Rehobeth Beach brewpub.
A-hazy golden orange color with a fluffy white head and good amount of lacing. Lively.
S-fruity and hoppy, mild aroma for a 7.5. I do not pick up the maple on its own.
T-a nice blend of semi-sweet malt start and a dry,citrus hop finish. Tasty.
M-silky smooth and full bodied. No alcohol burn.
O- an all-around solid offering of taste and body. I was lucky to get it on cask. I have a bottle as well that I hope lives up to this.

Cask drawn - primed with maple syrup
A: golden hue with a little cloudiness
S: nose was solid with a nice hop note
T: lightly hopped ... very surprising and nicely balanced
M: full bodied with a light finish
O: really great beer for a nice night at the bar. Tastes and feels like a session, but far from it ringing in at around 7.5%

From cask to growler.
Poured into a brandy snifter.
Murky, dark-orange body with no head upon pour. Expected due to cask. Very low carbonation throughout.
Smells predominantly of the dry-hopped Cascades and the surprisingly strong, alcoholic aroma. Full of bitter pine and resin in the glass. As it warms to room temperature, the residual sugars of the maple syrup appear and add a nice, caramel-like sweetness to the nose. Not as potent as a CBS or DdC Printemps, but rather well-incorporated.
Opens up with the bitterness of the 90 and balanced by the caramel maltiness of the 75. Pretty cool. Maple syrup isn't much of a component in the taste though, like the smell. The 7.5% ABV is really obnoxiously obvious at the end though. It kinda kills the flavor profile. Very surprising. Decent tasting blend of an IPA overall.
Low carbonation as expected. Light-bodied. Glad to have finally tried this.

on cask at devils den in philly
Pours a clouded orange color with some golden straw hues. Crop of creamy white head slowly dissolves with some wispy retention. Plenty of patchy rings of lacing on the glass.
Some citrusy hops in the nose with a decent amount of sweetness. There's a hint of the maple I suppose, but more of a caramel bready touch from the malt.
Nice bitterness up front with plenty of citrus flavor. Tangerine and grapefruit with a soft notion of tropical tones. A little sweet with maple and caramel throughout the somewhat bready malt backbone. Finishes fairly bitter and creamy.
Medium body, milder carbonation, creamy and slick on the tongue, very easy drinking. This is pretty nice, I enjoyed the cask effect although I felt the nose was pretty muted.

A-amber with a creamy colored head. good lacing
S-strong scent of fresh citrusy hops with a touch of barley. strong and complex.
T-comes in with a smooth taste of fresh citrusy hops, again with a touch of barley. a citrusy bitterness sticks to the tongue. good matching after-taste. very creamy.
M-very creamy, almost watery with a creamy finish. expected considering being from the cask
O-it is good. it definitely does taste like something in between the 90 and the 60. i'm not getting any maple at all. i'm appreciating the cask aspect. i'd definitely get this again. i'll be on the look out for the bottled version.
please release this in cans...i know how ridiculous that sounds but it'd be all i'd ever buy.

On cask last night at Sunset in Allston. Served in a standard pint glass. Dark orange color, with a slightly murky body. Not much head, but some lacing. Smell had a pine-like and citrus aroma. Not overly impressive to look at or to smell. Taste was hoppy, but mellow, which is what I like. The cask conditioning really smoothed out the edges here, and left a quite approachable IPA in my glass. Mouthfeel was on the thin side but still very drinkable. This was the first time I've had this since the big debut night a few years back, and it's still a nice treat to see on cask now and then. Helped me wash down a bacon burger and fries.

Johnny Cask 75 Minute IPA (with maple, or so I was told) on cask at DFH Brewing and Eats in Rehoboth Beach.
Amazing retention, white head with good lace. Light brown body.
Hoppy nose, a bit one dimensional, but it's an IPA, so what do I know?
Hops in the taste, but mellowed. Maybe maple... but maybe not.
Quite smooth and drinkable.
Not worth the hype, but then I'm not an IPA person, so I pose again, what do I know?

dark amber copper in color, with thin white head of tiny fine bubbles. aroma is sweet - malt and orange citrus. taste is very well balanced between the malt and hops. extremely smooth body and soft carbonation typical of the cask treatment. very tasty.

Hand-pumped into a pint glass for $5.50. Sampled 11/23/10.
A: The billowing 3 finger head is extremely slow to deflate. Off-white in color, foamy, airy and bubbly from the hand pump serving. Retention is excellent. The body displays a murky amber color, with a gradient from pale yellow to pale brown. Transparency is low. Lacing is thick and soapy looking, and clings to the top of the glass only - no matter how much beer remains - then slides back down slowly.
S: One sniff and supreme freshness is evident. If this beer wasn't brewed just days ago, I'd be extremely surprised. The flavor is somehow quite UNlike both 60 and 90, although more closely aligned with 60 if I had to choose. Compared to it's brothers, the hop quality in 75 favors pine, citrus and resin while the malt character is more biscuity. Much to my liking, the nut and caramel component has been dialed back considerably. The nose is a perfect example of why freshness is paramount in IPAs.
T: For whatever reason, the flavor closely resembles the nose, but does not impress me nearly as much. Pretty darn good nonetheless.
M: Ridiculously smooth, very lush texture. The body is medium light, a little grainy, and perhaps even thin or watery when compared to co2 servings.
D: [DRINKABILITY] You could lose an afternoon or two throwing this one back. Top notch drinkability - and I think the cask serving has something to do with it.

not sure if its always like this, but i had it casked with maple syrup at the taproom on the beach. poured a relatively flat looking amber color. smell was sweet and hoppy, more like the 90 minute, but with definite maple sugar notes and some mild woody vibes from the cask conditioning. taste is identical, light hints of maple, nothing overpowering at all. mouthfeel is less flat than the appearance, actually quite lively, with a sticky icky hop body, drinkable though. nice beer, wouldnt have 5 of them

Had on-cask at the DFH brewpub in DE. Poured a very nice amber/orange color with a fairly large white head that receded slowly throughout the session. Moderate/spotty lacing. Aroma of earthy/floral/piney hops, grass and sweet malts. A touch of citrus...not too much fruit/citrus on the nose. Tasted of earthy/floral/piney hops, grass, honey (?), citrus and sweet malts. SMOOTH for an IPA. I think this one cask conditions well!
Medium in mouthfeel with a dry finish. Definitely stays on the palate for awhile, so be mindful of that when sampling a flight.
Overall, a good brew, but I still prefer 60 minute.

Cask at the DFH Brewpub as part of a flight.
Poured a slightly hazy brilliant orange with a dense, creamy ivory head that settles to a pillowy cap, leaving lots of sticky lacing. Nice aromas of sweet caramel malt and pungent pine resin and grapefruit hops. Typical DFH IPA aromas, but very fresh. Getting just a whisper of maple syrup from the bottle conditioning. Taste is...60 Minute meets 90 Minute (duh). Sweet caramel malt, pine and grapefruit hops, and a touch of the signature DFH yeast. Expertly combined the drinkability of 60 with the hops of 90. Mouthfeel is smooth and creamy with a medium body and solidly crisp carbonation. Just a great beer that combined 2 old favorites, can't wait to see this in bottles!

Going to the DFH Pub for the first time, this one was a must-get and I wasn't disappointed at all... one of the best beers I've ever laid my lips on. The super hoppiness of the 60/90 minute IPA's, but balanced with some nice caramel syrup to give it a great mouthfeel. This beer's flavor is delicious and goes down way too easy, would definitely go back there just for another pint of this!

Firkin at Side Bar in W. Chester
Pours with a fluffy, foamy orange head over a cloudy prange-to-brown body.
Aroma includes light citrus, like fresh orange peel and some light biscuit in the back.
Creamy and delicious - the flavor is much more pronounced with tree citrus (orange, lemon) and sweet malt balance.
Mouthfeel is creamy and smooth with a fairly dry finish.
Unlike many IPAs this one holds up really well off the firkin.

Had on cask at Sunset in Boston.
Reviewed on my mobile, so apologies for brevity.
A - Honey orange that appears very foggy right after the pour, mainly due to the cask pour. Turns into thick head that lingers for a while.
S - The smell is piney, resiny hops. There's a bit of fruit sweetness in the nose.
T - This is a situation where the combination is greater than the sum of its parts. Delicious, bitter, slightly sweet IPA. Wonderful beer.
M - The only lacking section is the mouthfeel. The bitterness holds on a bit too long without the malts quite to balance it out.
Overall, this is my favorite minute IPA from DFH. As I said before, it takes the best parts of 60 and 90 and makes them better. I'll seek this out again.

Cask at the Dogfish Head restaurant in Rehoboth Beach, Delaware.
The cask made this an extra special treat. Pours a wonderful rick brown color with golden undertones from the 60 IPA. Head was bountiful, thick and creamy like a Guinness.
Taste was well-balanced, the 60 and 90 working perfectly together. Plenty of hops, even for a hophead.
Smooth, delicious, wonderous. A must try.

Had this at the Dogfish Head Alehouse in Rehoboth, DE in a pint glass on cask on 7/19/11 but review did not show up; recreated from notes.
A -- golden yellow with 2 inch white/yellow head
S -- mild hop flavors, hints of freshly ground grain / bread
T -- very balanced IPA (almost to the point of being an APA) with hints of toasted barley present, but not overpowering
M -- good CO2 considering it was cask conditioned and served at 45-50 F; tremendously smooth
O -- I don't typically enjoy cask conditioned beers, but the servers recommended this. Out of all the beers I've had at the alehouse, this has been the most surprising and enjoyable. The beer is incredibly smooth and the hop and fresh grain/bread flavors are clean. Great if you need a break from the bigger hoppy beers (but still want those hops!), and capable of displaying the awesome flavors of fresh ingredients that will keep people drinking. Definitely would have again (and again)!

Had a few of these at Novare Res during their Dogfish event.
A: A sort of murky orange due to it being on cask, I noticed my second glass was a lot clear than the first. Very little head after it arrived to me, again, the nature of cask.
S: Some sweet floral hops blend into caramel and slight maple syrup. There is also some pine hop notes.
T: Hops are all resin and pine here, any floral notes before are completely blown away. I got a strange almost smoke flavor that I would guess is coming from the interplay of the malts with the resiny hops. Sweetness is right where it should be; I find 90 Minute way to sweet and this beer truly is somewhere between 60 and 90.
M: Nice cask conditioned body with a surprising alcohol presence. Finish has some lingering sweetness but is mostly bitter.
O: Out of their very large and often zany line-up 75 Minute certainly stands out from the rest. I'd say its one of their best and most grounded ales they make. Definitely worth trying if you get the chance, even if you aren't usually a Dogfish fan.

A cask pint at the brewpub. It's been a long time since I was here.
A: The IPA is a golden autumnal color, equial parts brown and orange while still translucent. A cask-induced head, thick and densely compact, leaves strata of lace behind.
S: Citrusy aromas waft out of the glass, paired with a caramel malty sweetness. The cask does a yoeman's job of taking the edge off of the hops.
T: The taste is a little, well, underwhelming. Plenty hoppy, the ale doesn't have that all-encompassing bitterness that I was hoping for. I guess that in hindsight that is appropriate, as neither 60 nor 90 are hop bombs. Here the caramel malts stand out more, a sweetness that carries the hoppiness far. Those hops are citrusy, strong even within the confines of the cask. A good start to my lunch at DFH.
M: The mouthfeel elicits both hops and malts, the cask lending more strength to the malt side. Still good though, a drinkable cask offering.

Had this at the brewpub in Rehoboth. I was excited to give this one a try, as it was probably my only chance to have it. Looks a little cloudy compared to the 60 minute and 90 minute. Not a strong smell coming off of this one. Taste is good. Slight citrus bitterness with some sweet malt from the 90 minute, I'm guessing. The mouthfeel is where the real difference is. Very creamy. This one went down pretty quickly. Solid, but I like both the 60 and 90 minutes better seperately.
