The carbon dioxide trapped during bottle conditioning gives 75 Minute IPA a soft and velvety mouthfeel. Dry-hopped with whole-leaf Cascades, this complex IPA has been known to inspire pilgrimages to our brewpub.

Pours hazy orange with an inch of bubbly white head.
Citrus is dominant at first. Peach, orange, and some pine a prevalent. Resinous hoppiness, mildly sweet malt aromas.
More hoppy resin notes in taste, tropics, pineapple, juiciness, big dry bitterness. Some balance in sweetness.
Finally. This is where the maple syrup shines. Very nice body on this IPA. Gorgeous feel. Dry finish with bitterness.
Great blend of DFH IPA classics. Glad I could try this but I don't think I would spend the money again.

A: light copper, nice head sticking around.
S: Grapefruit, resin, sappy oak tree, Very interesting. A touch of earth and a nice malt backbone. Almost a plum characteristic.
T: Woah! maple on the finish, not much of a hop bit but definitely alot of hop flavor. A ton of pine! White grapefruit, Starts out juicy with a really dry finish. A bite of earthy hops on the end with a lot of orange rind and nice caramel malt surrounding all of it. I once again tasted a little light plum almost.
M: Very light. Not much carbonation to speak of. Slides down smooth!
O: Every drink is different! its malty, hoppy, spicy at times and has a wonderfully dry finish. compex and every changing. Not what i was expecting but some seriously tasty stuff. I could drink this for days. / 91

Review taken from notes end of March 2013.
1 pint 9.4 oz brown bomber like bottle Dogfish style of course. Bottle shape is really unique a lot like the brewery itself and the labeling is pure quality. As for art it's top shelf and really something that caught my eye. My favorite DFH bottle art to date! Poured this into a standard American DOgfish Head pint glass.
A - shade of light amber in color. Creamy thick head fluffs on top and stays throughout. Freaking ridiculous quality with this head. It eventually sits down to the perfect height and goes nowhere. Unbelievably creamy. One of the best looking ales I've ever experienced leaving a load of stick to the walls of this pint glass.
S - some sweet fruits up front of orange, grapefruit and lemon. Citrusy hop forward. More just down right sweet and balanced aroma. Caramel malt creeps up and the nose is left with that maple syrup they tell you it's brewed with.
T - not as hop powerful as either of its minute brothers, but they are there up front. Resinous hop notes to start that fade to a more citrusy flavor. A touch of caramel malt with the maple syrup doing a balancing act on the entire flavor. Notes go in order for me as followed:resinous hops, grapefruit, slight apricot, nice citrus, caramel malt, toffee like with a maple syrup presence toward the middle and finish.
M - damn is this thing smooth. Id say medium bodied and thick. No where near the hop bitterness of either the 60 or 90 minute ipa's, but its what I wanted from this. Smooth and thick, but the balance allow a refreshing character to the 75 minute jewel. Easily enjoyable and easy going in the feel department. An ipa anyone can enjoy. You get your hops, but you get a superb balance as well. Just a nice flow to the 75 minute ipa.
O - why is this only a rotating offering? That's the only fault I see with this ipa. The addition of maple syrup do what's intended in creating a smooth easy going ipa while still getting big unique DFH flavor across to the drinker. The balance and smoothness really go from how it sits in the glass to the last drink. I'm going on a hunt for more of this before its gone. I wish breweries would read these reviews because this needs to be in consideration for a year round spot. Put it in the same odd ball bottles, I'm not asking for a 6 pack of 12 oz bottles. I'm just asking that this particular 75 minute ipa is available more throughout the year. My favorite Dogfish ipa? Without question. My favorite Dogfish offering of any kind? It's close. A top 3 without question.
