Notes:
Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee, St. John's Wort and licorice root. We use whole-leaf Cascade and Fuggle hops, as well as pale, roasted and oatmeal grains.

Single bottle (bottled on 10/19/09) poured into a tumbler.
Appearance: Almost pitch black - you can make out some brownish red towards the bottom of the glass if you hold it up to the light, but otherwise opaque. The head is not exactly bone-white like described on the bottle, but it comes out brown when pouring and becomes light brown as you let it settle. Persistent 1/8" head with lots of lacing as I drink it down.
Smell: Hint of chocolate up front, followed by some coffee and that distinctive chicory smell.
Taste: First sips when cold you get chocolate and coffee. As it warms up the chocolate goes away and the coffee comes out front with the chicory finish. Chicory can be kind of bitter but I'm used to having it now and then since it's a US southern taste in coffee. However, the more the beer warms up, the more bitter the beer becomes.
Mouthfeel: Faint carbonation on the tongue, gives you the thought that it will be thick on first sip, but then it goes down quickly and maybe a hint watery.
Drinkability: Worth trying - but like chicory, I think this one is an acquired taste. Still, I found it a nice post-dinner treat - like having a coffee after dinner. I think the bitterness of this beer would combine well with a desert after a meal.
